MERRY CHRISTMAS MY LOVES! How many people have been waiting for Christmas as I have been? I know its not the same as it used to be when we were growing up, but, am still that excited! This year has been an amazing year, I decided to start my YOUTUBE channel and so far I'm loving the response I have been getting from you guys. So far I have 1,550 subscribers and looking foward to what 2020 will bring! Another channel milestone is that I got my first 10,000 views on one of my recipe, the fried pork recipe, people seem to love it that much. As I write, its so far ganered over 13,000 views! Okay, enough about my channel, PLEASE SUBSCRIBE if you have not! For real now, about Christmas🎄🎄 My memories of Christmas will always be, wearing new clothes, going to church, drinking Fanta and mandazi after church, then going home to eat Chapati. Uji ya Ukwaju na Ndimu (Tamarind & Lemon Porridge)
I love my porridge sweet and tangy and this is exactly what this Uji (porridge) is! I recently made some UKWAJU Juice and I knew this was the first thing I would be using the juice for. Most of the time people tend to think that Uji is usually for kids but its healthy, delicious and nutritious. This uji I made using Wimbi flour thats filled with lots of nutrients for the body, both kids and adults! Rich, creamy and thick, what more would you want from hot uji on these cold days?
Chicken Spaghetti Stir Fry
What do you get when you mix chicken and spaghetti, fried chicken that is, yummy delicious lunch or dinner! This is such an easy meal to make because you just use left overs and pap! you're done. Its perfect for the days you are too lazy to cook and you walk to your fridge and see some left over spaghetti and chicken. Perfect meal ready. This is an excuse to add all the veggies that you want to make the dish bright, colorful and delicious.

Half English Breakfast
If you are going to have breakfast, then you might as well have it like a King! So they said, and it is actually true! Apart from breakfast being the most important meal of the day, it is necessary for you to be able to function throughout the day. I usually have a light breakfast in the morning but this day we were going to attend a wedding so we needed a full breakfast to keep us filled until the reception. Most weddings are usually so long by the time you are headed to the reception for lunch you are literally shaking with both anger and hunger, lol! That is how the English breakfast idea was born, well, half English breakfast! A traditional Full English breakfast includes Bacon, Sausage, Eggs which are either fried, scrambled or poached; tomatoes that can be grilled or fried; mushrooms, black pudding, baked beans; fried bread or buttered toast and served with either tea or coffee. I'm so looking foward to having a "full english breakfast" in future. In the meantime, enjoy this half english breakfast of mine, that was very filling!

Ndengu Curry in Coconut Cream:
Whenever I think about Ndengu or Pojo in Swahili or Mung Dal in Indian or Green Grams in English, 🤗😄 I always think of Chapati. My next favourite meal after R&B (Rice & Beans)! I like Rice and Ndengu but not that much, I would rather eat the ndengu on its own. I love coconut in anything, and that is what I love about this Ndengu curry. Homemade Popcorn 2 Ways:
I love popcorn! I love popcorn! I cannot stress that enough. My earliest memory of eating popcorn, I remember almost every weekend we would go to our cousin's place in Lucky Summer. They always cooked popcorn and served on a large tray with tea. We would all, kids, gather around and enjoy the snack. And so it has always been that we eat our popcorn with tea. Which some guys find it strange but it's the way we love it. Flavoured popcorn came along but we still stick to the authentic plain popcorn. Today I decided to try 2 new popcorn flavours and I must say I am loving the taste of butter and turmeric popcorn! Whats your favourite popcorn flavour? Pilipili ya Kukaanga (Swahili-style Fried Chili Sauce)
My first ever encounter with Pilipili ya Kukaanga was when we went to visit one of our cousin. She is "Coastarian" what we like to refer those guys who live on the Kenyan Coast like Mombasa, Lamu, Diani among other towns. They are well known for their spicy, fragrant and yummy Swahili cuisines. From bhajia, biryani, achari, mabuyu, mahamri, pilau, samosa, pilipili ya maembe... yaani, mapochopocho! 😋Our cousin had cooked Pilau and she says pilau is incomplete without Pilipili ya Kukaanga. Thus was the beginning of my love for this spicy hot delicious sauce! Pilipili ya kukaanga is simply a delicious chili sauce that is used to accompany dishes like Pilau, Biryani among other delicious Coastal delicacies. This is my simpler version but you can get as detailed as you like, you can add different spices, herbs, and even vegetables like bell peppers. Anything goes but the chillies are what is constant, so it depends how hot 🌶 you wanna go! I literally ate a few spoonfuls before I could cook the main meal, its that delicious. How to Make Ukwaju (Tamarind) Juice
My earliest memories of Ukwaju date back to when I was really young, less than 10 years old. Sighs "seems like ages ago lol" We used to go visit our grandma every holiday after closing schools. That is every April, August and December, like clock work we knew our holidays would be spent in "ushago" upcountry. And we loved it! Partly because the chores would be less, you know, its true that grandmas always spoil their grandkids 😉... I can't really remember which month it was or if it was those 3 months but the ukwaju (tamarind) tree was always ripe. Since the tree was too rough to climb, we would use long sticks to beat the pods out of their stems. Then we would gather on the ground, peel off the top later and suck the hell out of all those yummy insides. They do have a tangy sweet taste which we loved anyway. Then after the holidays, we would carry some back to town and mom would make fermented porridge and add the ukwaju while cooking. It was the best tasting porridge ever! Now fast foward to now, and being a grown up, I know the many uses of the ukwaju (tamarind) other than eating and adding to porridge. So my first ukwaju recipe is how to squeeze out the delicious juice so that you can use it for many other recipes. Have you tasted Ukwaju before? What has been your experience?
Oyster Sauce – Sauce Seasoning of the Week
I am always looking for sauces to add to my pantry since they add that extra flavour to my dishes. I have fish sauce and worcestshire sauce so adding Oyster sauce to my collection seemed like the natural thing to do. Oyster sauce is made from boiled oysters and seasoning. Despite the name, the savoury taste does not have a fishy taste to it. This is because the sauce undergoes a boiling process that retains all the flavour and removes most of the fishy taste that you might think it has.
Kenyan Dawa Drink
The dawa which is (medicine) in Swahili is a drink that is usually made to heal or help in curing the cold. It is a concoction that is made with ginger, lemon and hot water and can be alcoholic or like a mocktail. It was supposedly invented at the Carnivore
restaurant in the Langata suburb of Nairobi, Kenya.

Garlic Cumin Fried Beef
Remember how I told you that we celebrated Mashujaa day with some beans curry and beef? Well this was the beef dish that accompanied all the meals of that day. Unless you are vegan or vegetarian, everybody loves LOVES beef! Or maybe its just me, can it really be. I do love my Nyama Choma so fried beef, what we Kenyans love to call "beef wet fry" or "dry fry beef" is closer to Nyama Choma! Blueberry Lemon Muffins

If I am not eating them then I am cooking with them. Today I tried baking Blueberry lemon muffins. I love the purple color that oozes into the muffins as the blueberries burst as they bake. Spicy & Creamy Red Beans Curry
Happy MASHUJAA DAY KENYA! (HEROES DAY) Today is a Holiday to celebrate our heroes that fought for our self rule and independence. I know, beans is not exactly a celebratory dish, or is it? But this bean curry is what you just need to eat with some yummy chapati! We surprised dad for his birthday too. His birthday in on 23rd that is this coming Wednesday but since we were all available we thought why not have his birthday today. These beans were accompanied by some Chapati, cabbage stir fry, Beef Stew, and plain Rice. Like I said, these were no ordinary beans., no sir! You can add spice for some heat but still delicious just as they are.

Paprika Cumin Kenyan Chips Masala
I love! Love! Love! Chips Masala, which is my other favourite dish that brings me awesome childhood memories. We had several kiosks in our neighbourhood where you could get what we called "chips mwitu" (not restaurant chips) these fries were very delicious and sold for as little as Ksh. 10 ($1) per packet. By the time you are done eating you'd have spent up to Ksh. 100 ($10) because they are just too addictive! There are very few restaurants that I trust to cook the best chips masala/masala chips. I love my homemade version because you can add whatever spices you want! I love spicy food so this recipe is quite spicy, which I love, you can have more or less spice as you want.

Chicken Salad With Lemon Pepper Dressing
I love fresh vibrant salads that are crispy with a tiuch of tangy and sweet. There are so many variations of salads and different ways to serve them. Healthy breakfast is the best way to start your mornings. Since I love avocado my first smoothie on my blog is avo-strawberry. This smoothie is creamy, filled with great nutrients like Calcium which is wonderful for your bones. The best part about smoothies is that you can substitute lots of ingredients to suit your diet and preferences. If you want sugar free, you can skip the sweetener, if you don't use dairy you can add water instead or use plant based milk like almond or soy. Smoothies are great breakfast options, great for weight loss or even a post work out drink.

Sausage Carrot & Onion Stuffed Omelette
Breakfast has always been the best part of starting my morning. Lets get a bit theoretical about omelettes a bit as I gather ingredients for today's omelette. As you know an omelette is usually made from beaten eggs fried with oil or butter without stirring like its usually done with scrambled eggs. The omelette is commonly folded around fillings like mushrooms, cheese, ham, chives, bacon or vegetables. Sometimes you can have a combination of two or more of the ingredients. Some interesting omelettes include the Nargesu an Iranian omelette made with spinach and fried onions spiced with salt, garlic and pepper. Egg foo yung/oystee omelette is a Chinese omelette. Tamagoyaki is a traditional Japanese omelette where eggs are beaten with mirin, bonito flakes, soy sauce, water and sugar. So many ways to cook the omelette and I have just started, I must say I still don't have a favourite, yet. Let's get cooking loves!

Kenyan Stir Fry Pork Strips
So many ways to cook pork and I have only just began. Its already the second por recipe this month and I'm already looking for other ways that I can enjoy pork. I had the most amazing pork at a place along Mlolongo Mombasa Road that apparently specializes in all kinds of pork recipes. From pork fry, grilled pork, stewed pork to stewed pork. I guess you can say I'm trying to replicate that dish. I could go and ask the chef about his recipe, trouble is, I'm not sure I remember the place. It was tucked away among many vibandas... I still have to look for it. But honestly this recipe came out of a missing ingredient, tomatoes. I was just going to make a simple pork recipe for lunch that just included frying the pork in onions, tomatoes, adding salt, and that was it! But then it was already lunch and I didn't want to go to the grocers. Luckily I had some veggies like french beans, carrots and bell peppers, so I decided to make the recipe a blog post, and here we are.

Chili Stir Fry Prawns
Ever made a dish that you always see in restaurants or other cooks making and it seems complicated? For me it has always been seafood. Specifically all other sea foods apart from Tilapia that we cook all the time at home. First ever prawn recipe and I'm so excited. You should see me do a happy dance. The weather has done a complete 360 turn and its getting colder by the day. I wanted something spicy and I happened to have some prawns that were lying around, just taunting me, come on, cook me, cook me pleeeze! I just had to. The best part about cooking prawns is that it takes very few minutes and they're done. A perfect dish that will impress your family and friends when you come together
Broccoli & Onion Stuffed Omelette
Growing up I never, I mean loathed broccoli! They just seemed like these tasteless mushy vegetables that did not even smell nice. Now that I love cooking and trying out different combinations, I know better. I love broccoli better. This stuffed omelette is healthy and light, plus the added benefit of lots of veggies, its great for someone who wants to loose weight. The trick to enjoying vegetables is not to over cook them as they will be soggy and tasteless. Adding spices is another way that you can up the flavour of vegetables especially if you plan to eat them without any sides. Breakfast is important so make it healthy and delicious.

Chicken and Veggie Stir Fry
First of all I love how rustic this non stick pan looks. I love anything vintage and rustic, from kitchen utensils, decor and even clothing. If I could I would just have a whole room in the house filled with kitchen utensils. My favourite aisle in the supermarket is always the utensils section, I mean, you can never have too many soup bowls or silverware or dutch ovens, right? Anyway, as you probably know I love CHICKEN, theyre probably the most recipes I have on here! I can't resist how good chicken is and how many recipes you can come up with with this humble bird. This dish is vibrant with its mix of bell peppers, veggies that make it perfect for a weeknight meal or quick lunch.
Managu in Coconut Milk
I love traditional Kenyan vegetables. Not only are they healthy but delicious too! "Utasahau nyama" (you will even forget meat) that is how good these traditional vegetables are. I cooked mrenda thats locally a preserve of people living in the western parts of Kenya. Its a vegetable that has texture like Okra or Lady fingers that get that sticky slimy feel when cooked. Most people do not like mrenda because of that stickiness but I love it especially when you add milk and eat after several days. Managu has become one of my favourite traditional vegetables because once you cook, you can eat for several days without getting bored. Have you cooked managu before?
