I love mangoes. I love strawberries. Freeze them. Drink them. I am recently loving smoothies especially for breakfast. You will definitely love this smoothie since it has a handful of different fruits that are naturally sweet. You can even skip the honey due to how sweet the smoothie will be for you.

I'm starting or rather continuing healthy eating with oats. Overnight oats to be precise, fast, quick and filling. The best part of making overnight oats is that you can top up with fruits, nuts, granola, seeds or even chocolate. It's mango season again and I thought why not make it a fruit oats meal that is vibrant and tropical plus of course delicious! I had fun making the strawberry one so this was even more exciting coming up with the flavor combinations. Oats contain carbohydrates, fiber, protein and good fat which gives the body the daily recommended nutrients and keeps you full for the rest of the day. This is turn lowers the risk of hear disease and reduces the level of blood cholesterol. Mangoes on the other side give you Vitamin C and folate while chia seeds are rich in protein, calcium, iron, carbohydrates and good dietary minerals. Combine these three ingredients and you are on your way to a filling healthy breakfast or snack option that will leave you satisfied and peace of mind. Mangoes are still in season so you have to take advantage of them to add delicious fruits to your diet. Overnight oats are great because you use minimal effort but the next day you have breakfast ready to go that has all the elements of healthy eating and/or snacking.

Happy Friyay my lovelies! It has been mango season in Nairobi and I always take advantage of these sweet delicious fruit. Mango is used to make ice cream, juices, fruits bars, smoothies, ice cream, fruit bars, raspados, aguas frescas, pies, and sweet chili sauce. In Central America, mango is either eaten green mixed with salt, vinegar, black pepper, and hot sauce, or ripe in various forms. Pieces of mango can be mashed and used as a topping on ice cream or blended with milk and ice as milkshakes.  Sweet glutinous rice is flavored with coconut, then served with sliced mango as a dessert. Green mangoes can be used in mango salad with fish sauce and dried shrimp. Mango with condensed milk may be used as a topping for shaved ice. Sour, unripe mangoes are used in chutneys, athanu, pickles, side dishes, or may be eaten raw with salt, chili, or soy sauce.  Ripe mangoes are also used to make curries.  The fruit is also added to cereal products such as muesli and oat granola or parfait. Mangoes may be used to make juices, mango nectar, and as a flavoring and major ingredient in ice cream and sorbets. As you can see, the mango is not just a humble fruit but can be incorporated in many meals, from the savory to sweet. For my parfait today I chose to use cereal and to layer with the blackberry yoghurt. I love that with parfaits you can use fruit, cereals, granola, cake or even oats to layer the dessert.

This reminds me of when we were young and we would get ice cream after attending church. It was always a Lyons Maid ice cream.

Indulge in a unique Rum & Raisin Chocolate Mango Lassi! A delicious fusion of tropical mango, rich chocolate, and rum-soaked raisins for a creamy, flavorful treat. I think Lassis are the best thing to happen to dessert drinks. So easy to make and delicious as well. Lassis come in many different flavors that I would really like to try. Some are sweet, others salty, some include herbs like mint and most have fruit as the main ingredients. Today I give you a twist to the traditional Mango Lassi. A Lassi is basically just a yogurt based mango milkshake or a smoothie is you will. You can even add spices like Cardamon, Nutmeg or even Cinnamon.The fruits can be canned, fresh or frozen, if using frozen then you do not really need to add ice cubes. I wanted to up the flavor of the Mango Lassi by adding my favorite chocolate, Rum&Raisin Dairyland Chocolate!
