Gluten-Free Roasted Eggplant Lasagna


I have always wanted to try out cooking lasagna and since there are many versions of lasagna and we wanted to be healthy, my sister had this veggie lasagna which she was inspired to try out, I'm not the only cook in our family, though my sister will only cook when the inspiration and mood to cook comes along, lol! Anyway, this was the best lasagna I have ever tasted and I cannot wait to try it again. It is easy and everything is made from the scratch, from the marinara sauce to the minced beef. It's so perfect and filling even though we went for second helpings! Help! The best apart is that this lasagna is gluten free since we are using eggplant as the substitute for the pasta to layer the lasagna. As for the egg plant, you can bake it or pan fry, either way it'll be crispy and delicious.

Garlic Cumin Fried Beef


Remember how I told you that we celebrated Mashujaa day with some beans curry and beef? Well this was the beef dish that accompanied all the meals of that day. Unless you are vegan or vegetarian, everybody loves LOVES beef! Or maybe its just me, can it really be. I do love my Nyama Choma so fried beef, what we Kenyans love to call "beef wet fry" or "dry fry beef" is closer to Nyama Choma! This beef dish is one of those that you will be enjoying with your family on a regular basis. It is that delicious, I can guarantee you that!

This Maini Fry, also known as fried liver, was absolutely outstanding in every sense of the word. I genuinely cannot remember the last time I was this impressed by a dish that is so often misunderstood or dismissed by many people. I understand that liver is one of those ingredients that people either adore or avoid entirely, often because of how it has been prepared in the past. However, this time, everything aligned perfectly, the texture, the flavors, the balance of spices, the crisp edges, everything came together so harmoniously that I could not stop myself from exclaiming that it was “bomb AF.” Forgive the strong language, but honestly, no other expression could do justice to how incredibly good this dish turned out.

Beef liver is one of my favorite meals. I know most of my friends who do not like liver, some because of the taste or some say it is hard and too rubbery. I guess people have different experiences with liver, or it might be that their first experience of eating liver was not that exciting. Liver is a soft meat that if you over cook that is when it becomes rubbery and soggy. To get rid of the toughness which is because of the membrane, peel it away before slicing so that you are left with the meaty part. I love stir fry liver because it not only tastes better, but the stir fry process gives the meat a sort of crispy texture and perfect crunch. This recipe will have you licking your fingers and making it over and over again. Adding spices to liver gives this liver a fantastic, spice delicious taste. Enjoy with some rice, pasta, chapati but best had with Ugali

I don't think I will ever get enough of chicken. The luhya in me will not allow me to do that, hehehe! Apart from being delicious, there are so many ways to prepare that it never gets boring at all. My favourite way to make chicken is baking but lately am loving stir fry marinated chicken. The flavours are just awesome and mastered to perfection. Marinating chicken in spices and sauce will leave you with the best tasting chicken that there will be no leftovers! Your family will love this dish and will be requesting for it almost daily.
