Chunky Veggie & Chicken Stir Fry


Chunky vegetables are great because they are crunchy and crisp on the edges especially when stir frying. This chicken dish is so simple to make you will be making it on the regular! I had pre marinated the chicken so that it can even add more flavour and taste. I think I am officially a chicken addict. I have so many chicken recipes and still have more to try out! INGREDIENTS


1 Whole Chicken
2 Carrots chopped roughly
1 Red Bell Pepper
1 Green Bell Pepper
1 Yellow Bell Pepper
1/2 Bunch Cilantro
Pinch Salt
1 Tablespoon Minced Ginger

METHOD


Add chicken pieces in pan, cook until moisture completely evaporates


Once chicken is dry, fry until chicken cooked through


Add chopped carrots



Cook carrots 3 minutes or just softened a bit but crunchy


Add chopped onions



Fry the onions 1 minute


Add chopped mixed colored bell peppers


Fry 2 minutes


Add minced or ground ginger


Pour 1/4 cup balsamic vinegar


Fry until vinegar evaporated, add salt and pepper


Sprinkle chopped cilantro



Stir fry to mix everything


Serve immediately
