BLUEBERRY SORBET


I love yoghurt and if I could I would take it everyday I really would. And what better way to make yoghurt even more delicious - not that it needs any more deliciousness. I've always wanted to try making frozen yogurt, and even though it is still cold here in Nairobi, I can't help in indulging in one or two frozen treats. That's how far my love for frozen treats goes, I would eat ice cream while it is raining! I made homemade cookies and cream icecream, my all time favourite ice cream flavour! Now back to today's recipe. Sorbet is a combination of yoghurt and your favourite fruits. You can choose to use one fruit or even use a combination of two or more fruits. Today I decided to go with blueberries. Not only are they full of nutrients and healthy benefits but I do love the purple color that they usually have when you blend or even cook with them. With only three ingredients, you get a delicious frozen dessert that you can enjoy during the summer days. This recipe serves up to 3 people but if you are like me, you can just devour half of it. Especially sitting at the balcony legs on a stool drinking in the Nairobi sun, watching the neighborhood life sizzle by. Trust me this blueberry sorbet  treat is that good!

CINNAMON PEANUT GLAZED DOUGHNUTS


I'm currently loving trying out difference flavours of doughnuts. So far this is my second doughnut recipe. I made red glazed coconut doughnuts which turned out to be a hit and so I thought about what other combinations can work. Once you have the basic recipe for making doughnuts, you pretty much have a canvas on which to work with. I wanted crunchy doughnuts so I went with crushed peanuts on top. Delicious is an understatement! You can choose to fry or bake your doughnuts either way they turn out delicious every time. I think my next recipe will be baked doughnuts. Yum!

RED GLAZED EGGLESS DOUGHNUTS WITH COCONUT SHAVINGS


Happy New Month Loves! It's May! My birthday Month too! So excited to share with you today's recipe. Eggless doughnuts with red glaze and generously sprinkled with coconut shavings. How delicious are these doughnuts? Very! I literally ate half the batch, I kid you not! Doughnuts are like an ochestra in your mouth, delicious that they just make you sing like you are at the opera. I always make my doughnuts with eggs but today I chose to make some without. I love the flavor combinations that make these doughnuts totally addictive. Easy to make and more delicious to eat.

PASTELILOS de MANGOS



Since from tomorrow is Easter Weekend, I thought I would give you a delicious Caribbean snack or appetizer that you can make for your family or if you have kids you can make them together. Holidays just bring those comfy, warm feelings that you just want to bake! Ever since I discovered Puff Pastry I have wanted to make as many desserts with it as possible. Pastelillos de Mangos are simply easy Mango puff pastry turnovers. I made these turnovers my own by substituting the Cashew nuts with Peanuts and the mango preserves with cubed mangoes. Delicious is an understatement with this dessert. The pastry is flaky and completely complements the mango stuffing on the inside. If you are allergic to peanuts you can totally leave them out or add any other crunchy element in the turnovers. I loved using my own homemade puff pastry but you can readily get it in most shops especially those that specifically sell baking stuff. Mangoes are still in season so there is not really an excuse as to why you should not take advantage of this delicious fruit.

RED VELVET SHORTBREAD COOKIES


Hey lovelies! So my cookie obsession continues, I'm loving these three ingredient cookie recipes that make it that much fun and simplifying the life of my cravings. Cookies are meant to be that satisfying soothing comfort when you want a quick sugar fix. I love that these are crunchy as compared to these that were chewy and rich . Cookies are most commonly baked until crisp or just long enough that they remain soft, but some kinds of cookies are not baked at all. Cookies are made in a wide variety of styles, using an array of ingredients including sugars, spices, chocolate, butter, peanut butter, nuts, or dried fruits. The softness of the cookie may depend on how long it is baked. This recipe is so simple and the results make it so worth it. I love that with cookies you can add any ingredient that you heart fancies. Once you make these cookies, you will be making so many other cookies and make them your own.

OREO MANGO YOGURT PARFAIT


Mango season is still upon us. And what better way to celebrate this delicious fruit than making a mango parfait with it. I showed you how to cut mango cubes so now you have the best way of cutting mangoes. No more hustle about how to cut your mango. Today I'm making a yummy parfait that includes my favorite biscuits, Oreo... I could eat these little munchkins all day everyday. Anyway parfaits are simple desserts that you can whip up on the go and require very few ingredients, thus my love for them. You can make all sorts of parfaits, add any fruits, biscuits, granola and even cereals.The choices are endless, just layer your favorite combinations and you have yourself a winning combination of the best parfait in the world. Parfait from French meaning "perfect") refers to two types of frozen dessert; in France, where the dish originated, parfait is made by boiling cream, egg, sugar and syrup to create a custard-like puree which is not necessarily served in a parfait glass. The American version includes more ingredients like granola, nuts, yogurt, liqueurs and gelatin desserts made in combination with a topping of fruits or whipped cream that are layered and served in a tall glass. Recent trends introduced parfaits made by layering yogurt with granola, nuts or fresh fruits, such as peaches, strawberries, or blueberries. The oldest known recipe dates back to 1894. As you can see Parfaits have been since the beginning of time and will continue to be beyond the ages, why not indulge in this dessert and enjoy some history as well? Cheers to many more Parfaits!!!

3 INGREDIENTS CHUNKY CHOCOLATE BANANA COOKIES

Happy New Month! I know it's already 6th but the month is still new. Dairy free. Gluten free. Sugar free. What more could you want to guiltlessly enjoy a treat. The best part about these cookies is that you only need three ingredients. YES. Only three.  And you get yourself a decadent chocolate snack that you will want to eat everyday. Bananas add the sweetness naturally, the peanut add a smooth crunchy texture while the cocoa powder gives the cookies that chocolaty goodness. I love treats that need very little ingredients and take minimal effort. This recipe has both. These chunky filled with delicious chocolate and "healthy" banana goodness are soon becoming a family favorite. Men, I love cookies and I cannot lie ;)

RUM & RAISIN CHOCOLATE MANGO LASSI


I think Lassis are the best thing to happen to dessert drinks. So easy to make and delicious as well. Lassis come in many different flavors that I would really like to try. Some are sweet, others salty, some include herbs like mint and most have fruit as the main ingredients. Today I give you a twist to the traditional Mango Lassi. A Lassi is basically just a yogurt based mango milkshake or a smoothie is you will. You can even add spices like Cardamon, Nutmeg or even Cinnamon.The fruits can be canned, fresh or frozen, if using frozen then you do not really need to add ice cubes. I wanted to up the flavor of the Mango Lassi by adding my favorite chocolate, Rum&Raisin Dairyland Chocolate!

COOKIES N CREAM ICE CREAM


Whoop! Whoop! So excited to be sharing my first home made Ice Cream and not just any Ice Cream but my very favorite... Cookies N Cream! Ice Cream is just the best dessert in the world! Psst, Don't tell anyone, it's our little secret 😉😉😉... I have always wanted to give this recipe a try since its always great when you can make your own desserts. I decided to go one step at a time.So the first is that I had to make my own Condensed Milk but you can still buy condensed milk in the shops. The best part of this homemade Cookies n' Cream Ice Cream is that it needs only three ingredients to make which you can get easily, so there really is no excuse why you should not be making Ice Cream almost daily. Homemade Ice cream is great because you get the chance to experiment with different flavours that might not be available in the market.

HOLIDAY RED VELVET BUNDT CAKE

Christmas is over and I haven't been in the kitchen in a long while. I missed cooking! So what kept me away? My cousin's wedding! Such a fun and exciting event that was a destination wedding. I guess I relaxed after that and I decided to take a break from cooking. You know, tis the season to be merry! Sometimes its fun when someone else is in the kitchen and you get to enjoy what they have cooked.So to kind of end the Christmas festivities I decided to bake a Red Velvet Bundt Cake. So this is my very first Red Velvet Cake and I must say it cooked so well that it was moist yet crumbly, totally delicious. New Year Resolution: bake more red velvet goodies! WHOLEWHEAT MUG CAKE


It's been a while since I cooked a mug cake. All along I have been cooking with All Purpose Flour so I thought why not use wholewheat, to kind of give it that healthy vibe and all! Mug cakes are easy to make and takes minutes so you have your self serving dessert without waiting too long.In this cold Nairobi weather, you need a decadent dessert that will warm you up as you curl on the couch.

CRUNCHY PEANUT BUTTER MUG CAKE

Today's Mugcake Monday gooooes to... drum rolls please... Crunchy Peanut Butter! So far I can say that this is my favorite Mug Cake! So puffy, soft, moist like a sponge cake. I haven't posted a Mug Cake in a while, let's just say I did one but it didn't turn out the way it was supposed to. So I decided to give it a break. Until today. When I did the Peanut Butter one. So totally worth every bite.I literally just stood there spooning it out of the Mug after the first bite. It was supposed to be for breakfast with Tea but my Tea almost went cold waiting for me to stop downing my cake. Peanut Butter is so smooth, now imagine all that silkiness in cake! I should stop ranting about it and let you try it out for yourself.

NJUGU KARANGA

There is just something special about home made food. Whether it be a simple sandwich, a full main dish meal or snack, nothing beats knowing that you put a labour of love into the food you are eating. Most times the meal tastes a bit sweeter than eating outside. I love nuts and Peanuts are my favorite, especially the small red Peanuts, they always taste better than all the other kinds. So mom traveled up country and as is the norm, they would not let her travel back without the usual 'gunias' sacks of food. Peanuts never miss from all the food that grandmother packs for her to bring back to the city. Roasting Peanuts is an art form that I would like to think that I have mastered over the years. It takes patience because you cannot rush perfection. If you cook on too high heat, the Peanuts will burn and be raw on the inside.There are many ways of roasting Peanuts but this recipe is how I have been roasting them for years and it works for me. But it requires a LOT of patience!The Peanuts come out crunchy and completely cooked on the inside. They may seem raw because there are no burn marks on the Peanuts but trust me, they are perfectly cooked. We call these awesome snacks Njugu in Swahili, they are one of the many famous Kenyan Street foods. You can buy ready made or you can decide to roast them so that you can give them the attention they deserve. The best part of roasting Peanuts/Groundnuts is EATING them! BASIC FRENCH FRIES RECIPE

It's French Fries Friday!!! I totally made that up but, maybe it will be a thing, maybe. French Fries or Chips or Chipo, however you call them, have always been my very best indulgence. My love for French Fries dates back to when I was very young and me and my siblings would always wait at the gate for dad to come home. We always knew that something yummy was coming when we saw his hands with a wrapped package. Back then, French Fries used to be wrapped in old newspapers. So there we were on seeing him, "daddy chololo!, daddy chololo!, daddy chololo!" Don't ask me to translate that second word for you, all I know is that we were saying that "dad is coming home!" And we'd all ran up to him, grab the package that he was carrying and quickly ran to the house to unwrap the goodies. You should have seen our faces when we opened and found that it was meat!?! Apparently even meat was wrapped in newspapers at the butchery.All the hype would immediately end and we would all disperse quietly grumbling about how dad was unfair! Simpler good times, sigh. I'm sure dad would smile wickedly at himself knowing we really didn't run to welcome him home but ran after the goodies he was carrying. As you can see me and French Fries have had a love-love relationship that will transcend time and space and money. Making home made French Fries is simple and does not take up that much time. For my first French Fries recipe I just did the basic method with two ingredients. I will definitely be trying out many other recipes that I will share with you guys. LEMON BISCUIT YOGURT PARFAIT

It really has been long since I posted a Parfait recipe and what better time than now that I have discovered the yummiest Yogurt I have ever tasted. Delamere introduced their range of new Yogurts that feature real fruit, biscuit and even Caramel in them. This is just the best Yogurt invention ever! I have tasted their Lemon and Biscuit Yogurt and it. is. the. bombest! You can literally taste the Lemon and Biscuits in this Yogurt. This combo is just perfect. Parfaits are the simplest desserts to make, they take a little time and in the end you have this lovely dessert that you think, "hmmm, I made that" deliciousness is what I can say this Parfait brings.I added Cereals to make the layers and added Bananas. Full breakfast made 😉. I promise you will love this Parfait, only three ingredients yet it feels like you are eating seven delicious combos. Try it out and let me know. If you don't have this Flavored Yogurt you can just add Lemons and Biscuits and make your Parfait! Find the other two different flavored Parfaits, Peach Yogurt Parfait and Vanilla Yogurt Parfait.

BLUE BERRY MUG CAKE


MugCake Monday here! I just love the smell of freshly baked goodies, especially in the morning. There's just something refreshing in the way ingredients morph together and cook to create an awesome dessert or breakfast meal. Blue Berries are always in season in Nairobi so I always try to incorporate them in my food. I  made Pancakes with Blue Berries, absolutely delicious! I also added them in a Yogurt Bowl. So I knew I had to make something else with them.Mug Cakes were of course the next recipe I was going to include them in. Blue Berries are healthy and filled with awesome nutrients that are good for you. I couldn't wait for this Blue Berry Mug Cake to be done! The few minutes seemed like an eternity! Once done, it was a perfect, spongy Mug Cake. Don't take my word for it, try it out and let me know!

ZEBRA CAKE MUG CAKE

I don't seem to be getting tired of Mug Cakes, yet, as you can see here, here, and here, it all started with this and it's been downhill from there, or should I say MugCake Hill from there. I can't promise that this will be my last Mug Cake since I want to do all and any flavor I can get my hands on. Today we try out the Zebra Cake Mug Cake. Zebra Cakes are in themselves just awesome Cakes to bake and so I just had to have a mini version of that Cake! So far this is my best Mug Cake that I have made, it turned out moist and the alternating layers of Chocolate and Vanilla were very visible, so it didn't all mush together and be all not beautiful.This Mug Cake is Egg-less yet it is still tasty what more can I say than my Mug Cake journey has been set and the destiny is new Mug Cakes every other week, if possible every other day, I kid not.
