WHOLEWHEAT AVOCADO NAAN


I always love Indian food and one of the most popular dishes is Naan or Indian flat bread that accompanies most curries especially chicken curry. And therefore today's recipe is Avocado Naan. Combining two of my favourite foods in the world. I love that Naan is usually soft buttery fluffy goodness that goes so well with sides and even main meals. Avocado makes these Naans so soft and delicious, you can skip the yoghurt when you use avocados since they lend that creaminess to your Naans. To make the Naans even more healthy I used wholewheat flour that is great for this recipe.

WHOLEWHEAT MUG CAKE


It's been a while since I cooked a mug cake. All along I have been cooking with All Purpose Flour so I thought why not use wholewheat, to kind of give it that healthy vibe and all! Mug cakes are easy to make and takes minutes so you have your self serving dessert without waiting too long.In this cold Nairobi weather, you need a decadent dessert that will warm you up as you curl on the couch.

HEALTHY WHOLEWHEAT CHAPATI

In my quest to try and live healthy, I want to try out wholewheat foods. And since Chapati (flat bread) is one of my very favorite dishes to eat, I thought this time I would make Wholewheat Chapatis. Chapati making is a skill that needs lots of practice just like any other cooking technique. But I have discovered that the secret to making soft Chapatis is in using hot water. Hot water somehow softens the Flour before you begin kneading it. I must admit as a kid I never really liked 'brown Chapati' as we used to call wholewheat Chapatis, but as I grew up I guess I acquired a taste for them. They somehow became delicious. Maybe it was the way they were being cooked growing up. Wholewheat flour is kind of a challenge to work with when it comes to cooking Chapati.All the times I have cooked Wholewheat Chapati I have added white All Purpose Flour. I must try cooking the Chapati with all Wheat Flour and see whether they will hold. The ratio I use is usually 2 Cups Wholewheat Flour to 3/4 Cup White All Purpose Flour. This helps to bind the Flour while kneading and even cooking so that the Chapatis do not break apart. The other secret of making soft Chapatis is to knead with cooking oil as you finish. All I can say is that the Chapatis turned out soft and delicious. Try them out and let me know your experience with Wholewheat Chapatis.

WHOLEWHEAT CINNAMON FRENCH TOAST


It's Friday! What plans do you have for the weekend? Going out? Staying in?Travelling? Me you ask? I'll know by the end of today. Anyhu' enough ramblings for a second and let's focus on matters at hand. French Toast baibe! I have always loved Eggs, Bread, put them together and you'll have a little dance in your mouth. Making French Toast is so simple I have no idea why I do not make and eat it everyday of the week. Let me school you a bit about what a French Toast is. A French Toast is also known as Bombay Toast, Eggy Bread, German Toast, Torrija, Gypsy Toast or Poor Knights. It is made of Bread (White or Wholewheat) soaked in milk, then in beaten eggs and then it is fried. Preparing the French toast varies in many different places. There are those who dip their bread in milk only then the eggs added afterwards. French Toast is not only dipped in milk you can actually dip your French Toast in other liquids like Orange Juice, Rosewater and even Wine. You can dip the French Toast in these liquids before you cook or after you cook.In Hong Kong French Toast is made by deep frying sliced bread that has been beaten in Eggs and it is served with butter and then topped up with Golden Syrup or honey. The Spanish on the other hand have a different way of cooking their French Toast. Their version is called Torrija that is prepared during Lent and Holy Week. They soak stale bread in Wine, Milk, Honey and Spices. It is dipped in beaten Egg and fried with Olive Oil. This is done so that the process breaks down the fibres which results in Pastry that has a crispy outside and a smooth inside. They then sprinkle Cinnamon as the final stage. So so many ways you can make French Toast. Mine I decided to use Wholewheat Bread, I wanted to see whether it would still be great like using White Bread and it never disappointed. Make yourself a French Toast this weekend, I just might too.
