BLUEBERRY LEMON MUFFINS


Blueberries are those fruits thata are usually in season at different times of the year so whenever they come around I am always looking for ways to make use of them. If I am not eating them then I am cooking with them. Today I tried baking Blueberry lemon muffins. I love the purple color that oozes into the muffins as the blueberries burst as they bake. These muffins turned out fluffy and light, totally perfect!

BLUEBERRY MUFFIN OVERNIGHT OATS


Well hello there! Two oats recipes in less than two weeks? I must really want to eat healthy this year! Why am I even surprised? I should be eating oats daily, lol! I'm kind of falling or have already fallen in love with overnight oats. I used to imagine myself eating oats and I would totally dismiss it. The truth is, you never know what is good for you unless you try it! Oats can be boring if you just have them plain. Add texture, color, spice and aromaaroma, you have the best breakfast meal you can think of. Breakfast really is the most important meal of the day, hence the need to fill up on food that has immense nutritional value and keeps you full the whole day. You can never go wrong with oats, just add your favourite toppings and you have a complete meal for the day

BLUEBERRY SORBET


I love yoghurt and if I could I would take it everyday I really would. And what better way to make yoghurt even more delicious - not that it needs any more deliciousness. I've always wanted to try making frozen yogurt, and even though it is still cold here in Nairobi, I can't help in indulging in one or two frozen treats. That's how far my love for frozen treats goes, I would eat ice cream while it is raining! I made homemade cookies and cream icecream, my all time favourite ice cream flavour! Now back to today's recipe. Sorbet is a combination of yoghurt and your favourite fruits. You can choose to use one fruit or even use a combination of two or more fruits. Today I decided to go with blueberries. Not only are they full of nutrients and healthy benefits but I do love the purple color that they usually have when you blend or even cook with them. With only three ingredients, you get a delicious frozen dessert that you can enjoy during the summer days. This recipe serves up to 3 people but if you are like me, you can just devour half of it. Especially sitting at the balcony legs on a stool drinking in the Nairobi sun, watching the neighborhood life sizzle by. Trust me this blueberry sorbet  treat is that good!

BLUEBERRY COMPOTE

Today I had some Blueberries and tried to come up with something to do with them. I stumbled upon this Recipe and I immediately knew what to do with my fresh Blueberries. Blueberry Compte. A bit of 'deets' about what this sauce is. Compote is French for "mixture" and it is a dessert originating from medieval Europe, made of whole or pieces of fruit in sugar syrup. Whole fruits are cooked in water with sugar and spices. The syrup may be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, other spices, ground almonds, grated coconut, candied fruit, or raisins. The compote is served either warm or cold.Compote conformed to the medieval belief that fruit cooked in sugar syrup balanced the effects of humidity on the body. Because it was easy to prepare, made from inexpensive ingredients and contained no dairy products, compote became a staple of Jewish households throughout Europe. The dessert may be topped with whipped cream, cinnamon, or vanilla sugar. The syrup may even be made with wine! Other preparations consist of using dried fruits which have been soaked in water in which alcohol can be added, for example kirsch, rum, or Frontignan. For my first Compote, I used Blueberries, of which you can either use fresh or frozen. This was an interesting sauce that was sweet and tangy from the Lemons. Delicious! Satisfies a sweet tooth and versatile as it can be used in many breakfast meals.

BLUE BERRY MUG CAKE


MugCake Monday here! I just love the smell of freshly baked goodies, especially in the morning. There's just something refreshing in the way ingredients morph together and cook to create an awesome dessert or breakfast meal. Blue Berries are always in season in Nairobi so I always try to incorporate them in my food. I  made Pancakes with Blue Berries, absolutely delicious! I also added them in a Yogurt Bowl. So I knew I had to make something else with them.Mug Cakes were of course the next recipe I was going to include them in. Blue Berries are healthy and filled with awesome nutrients that are good for you. I couldn't wait for this Blue Berry Mug Cake to be done! The few minutes seemed like an eternity! Once done, it was a perfect, spongy Mug Cake. Don't take my word for it, try it out and let me know!
