PEANUT BUTTER MATOKE
Woohoo! So excited about today's recipe. It's matoke! I have always wanted to cook matoke, I don't know if it is laziness or I just had not gotten the matoke. This recipe is made by special bananas, which are longer than normal ones. But you can cook this recipe with normal ones, though they will not be called matoke. I wanted to add more taste so I decided to add peanut butter for some creaminess and get a thick gravy. Traditionally matoke is cooked by Ugandans where it is served with homemade peanut sauce. The matoke is cooked with whole bananas. Very delicious. I have had it at a function. You can even add coconut milk for more taste and aroma. The peanut butter matoke had no left overs, that is how delicious it was, looking foward to making more matoke guys.

COCONUT PEANUT BUTTER PANCAKES
I love peanut and if I could I would eat it every other day. Whether it's whole roasted peanuts or smooth peanut butter, I just love this stuff! Reminds me of when we were young back in the 80's when peanut butter was a new thing and it was a reserve of the "wadosi" (rich folk), we would really envy those kids who came with bread slices smeared withe the peanut butter while we had plain toasts, seems ridiculous but when you are a kid in kindergarten you always think that the other kids have better lunches or tea break snacks. Then came this advert for the skippy peanut butter, we would always sing along to it and really bug mum about buying 'skippy peanut butter'. Well she gave in and bought us the peanut butter, what? You'd think we had won the lottery! Needless to say, after that it was a regular addition to our breakfast and we thoroughly enjoyed making the other kids jealous and even bribing them with 'if you don't let me in the game, I won't give you my skippy peanut butter bread', nice memories hehehe. To bring back those memories, I though I would make peanut butter pancakes and add more deliciousness by adding coconut. Those two flavours just work wonders on your pallet.

CRUNCHY PEANUT BUTTER MUG CAKE
Today's Mugcake Monday gooooes to... drum rolls please... Crunchy Peanut Butter! So far I can say that this is my favorite Mug Cake! So puffy, soft, moist like a sponge cake. I haven't posted a Mug Cake in a while, let's just say I did one but it didn't turn out the way it was supposed to. So I decided to give it a break. Until today. When I did the Peanut Butter one. So totally worth every bite.I literally just stood there spooning it out of the Mug after the first bite. It was supposed to be for breakfast with Tea but my Tea almost went cold waiting for me to stop downing my cake. Peanut Butter is so smooth, now imagine all that silkiness in cake! I should stop ranting about it and let you try it out for yourself.

PEANUT BUTTER TOASTED BREAD SANDWICH
It's a lovely morning out there in Nairobi, it's been cold most morning sand so I am so happy that it decided to shine. I had missed the sun, can't wait to go and drink in some Vitamin D lol! Today it's one of those mornings that I crave for something Toasty like Bread. And what better way to indulge in my cravings than with a Peanut Butter Toasted Bread Sandwich. When it comes to toasting the sky really is the limit as you can choose which toppings you want in your toasted Bread Sandwich. I went for the simple Peanut Butter Toasted Sandwich because it is super easy to make and fast so you don't need to wait too long to eat it. The reasons why I love Bread is that there's so much choice. There are over 200 types of bread available in the world today, they include White Bread, Fruit Loaf Bread, Wholemeal Bread, Bara Brith Bread, Sourdough Bread, Flat Bread, Focaccia, Brioche...the list is endless so you have a wide range of Bread to choose from. Bread tastes great and it is cost effective, very versatile, there are so many ways to eat it, you can Toast it, Fry it, Crumb it, Bake it and then eat it for Breakfast, Lunch, Dinner or even as a midnight snack. Bread is also available everywhere, you can easily find it in shops, mini marts and even supermarkets. Bread is naturally low in both sugar and fat unless it is sweet Bread. Bread contains Iron which is needed to transport oxygen around the body. Folate naturally occurs in wheat and flour which is crucial in the formation of healthy blood cells. We need to eat more fibre and Bread contains this fibre. So much can be said about the benefits of Bread, for today let's enjoy some Peanut Butter Toasted Bread Sandwich.
