BRAWN & PEANUT BUTTER TOASTED SANDWICH


I love toasted sandwiches and I'm always trying to get new ways of stuffing the sandwiches. This toasted sandwich is easy to make and with only 3 ingredients, you are sure to enjoy it everyday. You can have it with tea, coffee, juice or even as a snack on its own. It's a fun way to cook breakfast with the kids as they can even choose the kinds of fillings they want. Who does not love peanut butter? Unless you are allergic you will enjoy this sandwich any time of day.

Toasted sandwiches are an easy and fast breakfast option that allows you to sit back and wait for your food. After all, the toaster does all the work as you sip coffee patiently waiting.

CUMIN TURMERIC PAN FRIED POTATOES


"It's only a few days until Christmas and I'm already getting anxious over how time has been flying by. Hey, what are you doing for Christmas? Today's recipe is a quick starter dish that you can whip up in less than 10 minutes and with only one main ingredient, potatoes! " It's already past Christmas, I know! Well, small confession about this post, it was supposed to go up on 12th December but we had an unfortunate family tragedy. We lost a cousin so everything just went so fast with planning a funeral, then travelling up country for the funeral. Got back yesterday and just stumbled upon this draft. Its been a bitter sweet Christmas holiday but things will hopefully get back to normal.

BACON CILANTRO SCRAMBLED EGGS


Scrambled eggs are usually easy to whip up in a few minutes and the best part is that you can add whatever ingredients your heart fancies! A few classic styles for cooking scrambled eggs include, American style where the eggs are scooped in towards the middle of the pan as they set, giving larger curds.  In India the Egg bhurji is the variant of scrambled eggs. Additions include onions, green chili, chopped ginger, turmeric powder and chopped tomatoes. Sprinkled with chopped green coriander and eaten with roti. The English style of scrambling eggs is where the scrambled eggs are stirred very thoroughly during cooking to give a soft, fine texture. Lately I have been obsessed with bacon I have put it in my very delicious Guacamole and also made its way to my delectable Potato Salad and I see the trend continuing for a very, very long time!

STIR FRY VEGETABLE STUFFED CREPES


I love CREPES! Sweet crêpes are generally made with wheat flour. When sweet, they can be eaten as part of breakfast or as a dessert. Common fillings include Nutella spread, preserves, sugar (granulated or powdered), maple syrup, golden syrup, lemon juice; whipped cream, fruit spreads, custard, and sliced soft fruits. Savory crêpes are made with non-wheat flours such as buckwheat. Batter made from buckwheat flour is gluten-free, which makes it possible for people who have a gluten allergy or intolerance to eat this type of crêpe. Common savoury fillings for crêpes served for lunch or dinner are cheese, ham, and eggs, ratatouille, mushrooms, artichoke (in certain regions), and various meat products. Batters can also consist of other simple ingredients such as butter, milk, water, eggs, flour, salt, and sugar. Fillings are commonly added to the center of the crêpe and served with the edges partially folded over the center. An interesting tradition about crepes is that, in France, crêpes are traditionally served on Candlemas (La Chandeleur), 2 February. This day was originally Virgin Mary's Blessing Day but became known in France as "Le Jour des Crêpes" (literally translated "The Day of the Crêpes", and sometimes called colloquially as "Avec Crêpe Day", "National Crêpe Day", or "day of the Crêpe "), referring to the tradition of offering crêpes. The belief was that catching the crêpe with a frying pan after tossing it in the air with your right hand while holding a gold coin in your left hand would cause you to become rich that year. The roundness, and golden colour from being fried in butter, of the crêpe resembles the sun and its rays. This symbolism also applies to the coin held in the person's hand. Yeeeeei to eating  more crepes!

STRAWBERRY COCONUT OVERNIGHT OATS


Want breakfast on the go? Overnight oats are the way to go! See what I did there? Overnight oats are perfect for busy mornings since you prep them the previous night and you only need top add any toppings you like.Overnight oats are nutritious, loaded with fiber, essential vitamins minerals, protein, and can help keep you full until lunch. The base for your overnight oats, are Oats of course, using old-fashioned rolled oats and sometimes quick oats. Chia seeds add that thick pudding like texture to your oats since they absorb the liquid. You can add nut butter or seed butter like peanut or cashew butter just to add a savory, nutty and creamy flavour. For the liquid add any type of milk like almond milk, dairy milk, cashew milk or coconut milk. You can play around with any type of fruit combination you like for your oats. You can mash fruit like blueberries to add more color, if the fruit like apple or banana tend to change color, top it the day you are serving. For sweetener it is optional if using ass maple syrup, honey, dates or even ripe bananas. Options for making your own overnight oats are endless, so go ahead and have delicious fun!

APPLE CINNAMON BUTTER FRENCH TOAST


Nothing I love more than the smell of freshly cooked french toast. It is literally almost intoxicating and tempting that you can ever resist. Today's french toast recipe is not your everyday average kinda french toast. It is rich, decadent, fragrant, spicy, sweet, yet crunchy. Forgive my over excitement, it must be the sugar rush I had when I devoured this breakfast all time favorite meal. Dessert or breakfast? It is really hard to tell when this french toast has all the elements or a rich expensive  dessert. For a recipe that is easy, insanely utterly delicious, and takes only 15 minutes, I do not see why this should not be a daily any time of day bite. That is if you do not mind a sugar overload early in the morning. Which I cannot complain about, I do love my sugar morning high.

CHIA SEED PLUM OATMEAL


Hey there lovely people! Happy Sunday! All this energy I have must have somewhere to go, no? Ok. back to the business at hand, bringing you a healthy, wholesome and quite delicious I must say, breakfast of champions. Oats. I never really was a fan of oats, at all, until I tried this really exciting oatmeal recipe. Still continuing with the Plum craze, me taking advantage of these fruits before I have to say bye bye. This Plum oatmeal has a lot of healthy nutrients that will fill you up and leave you totally satisfied, not only because the meal tastes delicious, it takes very little time to prepare. So far I'm loving my healthy choices and hope to keep up.This Chia Seed Plum Oatmeal will be a dance in your mouth from the crunch of the Chia Seeds and Poppy Seeds to the spicy taste of the cinnamon and tangy sweet of the Plums, your taste buds will thank you for days. Breakfast is usually the most important meal of the day, so why not start it high with this oatmeal recipe that is filled with all the goodness of a complete breakfast.

APPLE PIE SPICE PANCAKES WITH CHOCOLATE GLAZE


It's only one month till the end of the year drops by! I can't believe how much time has gone by. I have totally missed cooking and the first thing I thought to make were pancakes. You all know how much I love pancakes, which come a close second to crepes. I wanted to make something different today and so I remembered the homemade Apple Pie Spice Mix I made a while back.Great idea! The spice gives these pancakes that extra tasty and yummy feel. I love spices and anything with spices goes in my top list of dishes I like to indulge in.

UGANDAN ROLEX


Hey Lovelies,
So today I woke up with cravings for eggs and I remembered that I had heard about Ugandan Rolex. A famous Ugandan street food that made headlines a while back. I don't know why that was on my mind but I decided that it would be my breakfast since I had left over Chapati from last night's dinner. Ugandan Rolex is basically an omelet rolled inside a chapati. Sort of like a wrap. The omelet is fried with onions, tomatoes and cabbage, others add carrots and bell pepper.I didn't put cabbage in my Rolex since it wasn't available but the dish was delish! So easy to make and fast enough for you not to stand longingly waiting for it to be done. A perfect breakfast start to a cold Tuesday morning here in Nairobi!

BASIC CREPES RECIPE


I love Crepes, that is a known fact and I used to think that making them was hard and took too long. But the moment I made my first crepes, I have been having fun with these sweet french street food that are famous around the world. So far I have only made sweet crepes but in the coming days, I will be making more savory crepes. So today I thought I would share with you a basic crepes recipe that can be your go to crepe recipe. From there you can add any spices, herbs, fruits, vegetables, drinks like wine or beer and even use different kinds of flours. Crepes are made for everyone, whether you are Vegan, a vegeterian, on a paleo diet or you do not have any dietry needs. There are gluten free crepes, flourless crepes and even 2 ingredient crepes. So you see how much option you have when making crepes! Simple tricks for making crepes include not over beating the batter, a few lumps are okay. If you want a really smooth batter you can use a blender or hand mixer to mix the ingredients.For a finer crepe batter, you can pass the batter through a sieve for that perfectly smooth texture. To get extra crispy crepes make sure the batter is smooth but really runny. Do not put too much batter on the skillet or pan so that the batter can spread thinly around the pan. An important tip while making crepes is to use a non stick pan. This is because crepes are so thin and will tend to stick and you definitely do not want that! Use a rubber spatula if you can since it is thin and will help you smoothly slide it under the crepe when flipping it. Other than that, making crepes is fun and you get to enjoy the fruits of your hard - or not - labour! Here's my basic crepe recipe

TOMATO SCRAMBLED EGGS


Hey Lovelies,
It's been a while since I cooked eggs. The last eggs recipe was Spanish omelet and green pepper eggs. I love eggs and I always like to make them in different ways since eggs are pretty versatile and you can make traditional recipes or reinvent new ways to make eggs. Though I love eggs, boiled eggs are another story. I used to eat boiled eggs especially with kachumbari (tomato and onion salad) literally every week!Then I just I hated them, could not stand or stomach them, and taste for boiled eggs has not yet returned, even though I always look at deviled eggs and really want to try them out! But we'll see. So back to scrambled eggs, today's recipe is simple though you can always add in whatever spices, herbs or vegetables to make it more versatile. In our home we prefer to eat the scrambled eggs with Ugali. Totally delicious!

FLUFFY EGGLESS CHOCOLATE PANCAKES


Chocolate for breakfast? Pancakes for dessert? I say heck yeeeah! It's the Weekend! And what are weekends meant for? Pancakes! It's a Pancakes necessity... cue Mowgli singing the 'bear necessity song' I love animations, they just bring out the child in you, carefree, full of dreams and fantasies... I miss that. I love pancakes and I cannot lie... you see where this is going... waking up with songs in your heart just means that the day is off to a great start. It being a weekend just makes it that much more fun. Chocolate and Pancakes, my two favorite things.These Eggless Chocolate Pancakes turned out so fluffy and light despite them looking so heavy. The trick is not to overbeat or overmix the batter. I ate 3! Just had to put it out there . This is a desert or is it breakfast that I will be making again and again, and not just for the weekend. Hey, who said you cannot have dessert for breakfast or breakfast for dinner? Break some rules, it's a lovely life, whip it whip it whip it real good...okay I need to stop with the random music...haha! BREAKFAST FRIED POTATOES


How is your Friday coming along? Aren't you glad that it is the weekend soon? After a hectic week you just want to relax and blow some steam off. For me I like to just curl in, read a novel or read a recipe book. Yeah. I read recipe books. Not necessarily to find a recipe, just to read. For fun. Yes for fun. Am I the only one who does that? Lemmi know. So let's get into things food for today. As you know breakfast is the most important meal of the day, and as such you need to make it great. And there really are no rules about breakfast, and if there are, you can break a few, isn't life supposed to be unpredictable and spicy? Sometimes I'm not in the mood for a traditional breakfast so I decide what my mind, mostly my stomach tells me to eat.Potatoes are a great way to have breakfast, filling and healthy. You can bake this Breakfast fried potatoes or fry them like I did. Will definitely bake them next time, just to taste how different the textures and flavours will be. The best part of this dish is that you can have it for breakfast and if there will be any left overs, which I doubt, you can add to your lunch meals. So simple to make yet filled with all the goodness of a whole meal. Hope you enjoy making this dish!

NUTMEG MIXED SPICE MANDAZI

Today just feels like a weekend. Anybody else feels that way? I guess it's because we're still in an election mood. There was no bread so I thought I would make something that was filling and tasty too. What I could think of that would make a large quantity was Mandazi since everyone is at home. I just followed this recipe but this time I added in Nutmeg and Mixed Spices to give them that extra spice aroma and flavour. Such an easy dish to make and in less than an hour you will have your breakfast snack or food to snack on throughout the day. Spices were just too awesome as you could smell the delicious aroma all around the house as they fried. Mandazi are becoming my new favourite to go to breakfast accompaniment and snack. KENYAN FLAG INSPIRED CREPES FOR ELECTION DAY

So it's been a hectic few months with elections coming up tomorrow 08/08/2017. Elections tend to make you anxious as everyday it is always politics on TV, Radio, Social media and the internet. At some point I got tired of all the intensity and stopped watching news. So as go out to vote, let me share with you my Kenyan Flag colors inspired Crepes. Black. Red. White. Green. Those are the colors of our Kenyan Flag. Basically I just used a Crepes recipe and added food color to achieve the desired colors. I made these Crepes a few days earlier but I wanted to post them on the actual day of the election. Just showing my patriotic nature 😊😉 as we vote remembering that an election day is just that, an election day, life still goes on after that date.Well, the Crepes turned out delicious and it was almost crazy weird eating the black colored Crepes. Hey, what is cooking without adding a bit of creativity to it! Want a fun, creative way to serve your Crepes, this is perfect. You can do the colors in any design you want. It can be your country's flag colors, your favorite football team, your school's colors or any combination of colors that you want. Let me know what you think, yay or nay

LEMON POPPY SEEDS MUG CAKE


Mugcake Monday Peeps! Poppy Seeds just give any dessert a pop of color and special crunch. So it was inevitable that I would add these awesome seeds to my Mug Cake. It is just so exciting to scoop a spoonful of this lemon Mug Cake bursting with dotted spots of Poppy Seeds.Healthy and wholesome, you will enjoy having them in your Pastry, drinks, dressings and even Stews. The lemon in this Mug Cake gives it that refreshing clean feel and an almost summer taste.

POPPY SEEDS AVOCADO TOAST

One of my very favorite fruits is Avocado. You can literally have it with so many sweet or savoury dishes. I made Guacamole, a perfect dip that will feature more often. I was in the mood for something easy to whip up and since Avocado and Bread were available I chose to fix something with the two. To add some heat to the dish I sprinkled with Chili Flakes.It's still Poppy Seeds week so they were also included in the Avocado Bread. Ready in less than 5 minutes, this snack makes for a great on the go meal. You can even pack it for lunch as you go for work. To make it kid friendly you can skip the Chili Flakes and add Peanut Butter or Nutella.
