METHOD
Add sliced bacon pieces in non stick pan
Cook bacon until crispy brown
In same pan you cooked the bacon add the onions and cook until browned
Add tomatoes
Add cilantro
Add the spices, paprika, black pepper and salt
Start scrambling the eggs into the mixture
Continue scrambling until you get your desired doneness. I like mine well done so I scramble longer
Add the cooked crispy bacon, toss few minutes and remove from heat
Serve garnished with more cilantro and slices of lemon
