COCONUT CHICKPEA CURRY


I fell in love with chickpeas the first time I made them and served with rice. So today I decided to cook chickpea curry that is full of coconut taste and aroma. So DELICIOUS! Apart from its delicious nature, chickpeas are filled with nutrients like protein which is vital for our body's growth. This chickpea curry is both gluten free and dairy free so its perfect for Vegans or vegetarians. Both coconut milk and oil add a tropical yummy taste and aroma to this curry dish. Served hot with naan, rice or chapati, its perfect to share with family and friends over a cold winter night.

COCONUT SESAME FRENCH TOAST


French Toast Tuesday. That's what I'll be doing every week. I don't know but, French toasts are becoming my new favourite breakfast option. You can literally top the french toast with jam, honey, fruit, maple syrup or sugar for a sweet dessert or making savoury with your favourite sauce like ketchup, mustard or chilli sauce. If you want dairy free french toast, you can use orange juice, wine or rose water to soak the bread before frying. I love wholewheat bread because it is not only healthy but dense and will soak up the liquid without breaking apart. I like the French because they eat the toast as a dessert not as breakfast like most of us do, well, they did invent it so they decide how to eat the french toast.

STRAWBERRY COCONUT OVERNIGHT OATS


Want breakfast on the go? Overnight oats are the way to go! See what I did there? Overnight oats are perfect for busy mornings since you prep them the previous night and you only need top add any toppings you like.Overnight oats are nutritious, loaded with fiber, essential vitamins minerals, protein, and can help keep you full until lunch. The base for your overnight oats, are Oats of course, using old-fashioned rolled oats and sometimes quick oats. Chia seeds add that thick pudding like texture to your oats since they absorb the liquid. You can add nut butter or seed butter like peanut or cashew butter just to add a savory, nutty and creamy flavour. For the liquid add any type of milk like almond milk, dairy milk, cashew milk or coconut milk. You can play around with any type of fruit combination you like for your oats. You can mash fruit like blueberries to add more color, if the fruit like apple or banana tend to change color, top it the day you are serving. For sweetener it is optional if using ass maple syrup, honey, dates or even ripe bananas. Options for making your own overnight oats are endless, so go ahead and have delicious fun!

CONDENSED MILK COCONUT BURFI


Burfi/Barfi is a dense milk based sweet from the Indian subcontinent. The name barfi was derived from the Persian word "barf" which means snow. The main ingredients are usually sugar and condensed milk which is cooked until the mixture solidifies. Burfi flavour is usually enhanced with fruits like coconut or mango; nuts like pistachios, peanuts or cashew nuts and spices like cardamom or rose water. The sweets are usually cut into round, diamond or square shapes and are mostly served in India all year round but mostly  consumed during religious festivals, wedding ceremonies or holiday season like Diwali. Barfis come in different varieties that include sing barfi made with peanuts, besan barfi made with gram flour, pista barfi made with pistachios and kaaju barfi made from cashews. I must confess I am a sweet tooth so I wanted to give Indian sweets a go. These yummy coconut bars are just the perfect treat for a midday snack or even for the kids back to school treat. Had such a fun time making these I will definitely be giving other barfi flavours a try!

COCONUT AVOCADO SOUP


Want something extra amazing to drive away this cold? Why not try some warm hearty, very hearty soup. And not just any soup but my awesome coconut avocado soup! My #AvocadoAugust chronicles continues... Soup is one of those meals that you mostly get at a restaurant as a starter with some awesome sweet bun to go with. I love those mini buns that go with soups, you can literally devour all of them! But you don't have to wait to go to a restaurant to enjoy soup. Why not make your own delicious version that is filled with extra goodness and healthy nutrients. In this soup you get that smooth richness from the avocado, some tropical fragrance from the coconut milk and of course the spicy kick from the red chilli! Such a vast combination of flavours that work out so well. Oh, and just a great tip, if you want your Avocado to ripen faster, place it in a brown paper bag with a ripe banana or tomato. Enjy this delicious potato soup also once you are through downing this one.

FLUFFY COCONUT RICE


I can eat a whole bowl of plain rice without stew and be totally happy with myself. Rice is just fragranced aromatic and delicious on its own, especially Basmati rice! I love how coconut brings out the flavors in food, used mostly for desserts, but makes rice a dish you could eat everyday of your life without it becoming boring. This is a simple meal that you can whip up in minutes and eat with some left over beef, chicken or vegetables. Did you know: The varieties of rice are typically classified as long-, medium-, and short-grained. The grains of long-grain rice (high in amylose) tend to remain intact after cooking; medium-grain rice (high in amylopectin) becomes more sticky. Medium-grain rice is used for sweet dishes, for risotto in Italy, and many rice dishes, such as arròs negre, in Spain. Some varieties of long-grain rice that are high in amylopectin, known as Thai Sticky rice, are usually steamed. A stickier medium-grain rice is used for sushi; the stickiness allows rice to hold its shape when molded. Medium-grain rice is used extensively in Japan, including to accompany savoury dishes, where it is usually served plain in a separate dish. Short-grain rice is often used for rice pudding. Instant rice differs from parboiled rice in that it is fully cooked and then dried, though there is a significant degradation in taste and texture. Rice flour and starch often are used in batters and breadings to increase crispiness. Now you know!

COCONUT CHAPATI


I think if I had my way I would eat chapati every day of my life for the rest of it. Somehow Chapati never gets old! I always find ways to make Chapati that much more delicious and addictive, not that it needs any upgrade. I have always loved coconut, whether I am using it in drinks, rice or just munching on it raw as I grate, hence today's recipe of Coconut Chapati. My memories with coconut date back to when mom used to buy lots of coconut and cook it in pilaf rice. We had that traditional coconut grater that was made with wood. You would sit on it and pup half the coconut on a blade that was at the front and grate away.It was always fun and we all looked forward to most weekends that we got the chance to do that. So take coconut and add Chapati, and you have a match made in heaven. The coconut made the dough so soft that it was easy to knead and did not take too much time to rest. As you cook the Chapati you will be warmed up by the sweet aroma of coconut that emits from the chapati being cooked. So far I have made Dhania Chapati, Wholewheat Chapati and Plain Chapati and I still look forward to making many more!
