It's only one month till the end of the year drops by! I can't believe how much time has gone by. I have totally missed cooking and the first thing I thought to make were pancakes. You all know how much I love pancakes, which come a close second to crepes. I wanted to make something different today and so I remembered the homemade Apple Pie Spice Mix I made a while back.Great idea! The spice gives these pancakes that extra tasty and yummy feel. I love spices and anything with spices goes in my top list of dishes I like to indulge in.
Ingredients
1 Cup All Purpose Flour
1 Tablespoon All Spice Mix
2 Tablespoons Sugar
1/4 Teaspoon Baking Powder
1/2 Cup Milk
3 Tablespoons Melted Butter
1/8 Teaspoon Salt
Chocolate Glaze
Instructions
Pour all the dry ingredients in a medium bowl
Whisk the dry ingredients until well incorporated
Add melted butter
Pour in the milk
Mix the wet and dry ingredients until you get a runny consistency. The batter will have a few lumps which should not worry you too much
This is the consistency you are looking for. Incase it is too heavy, keep adding milk one tablespoon at a time untill you get your desired consistency
Measure a ladlespoonfull of the apple spice mix pancake batter
Carefully drop the batter into a non stick pan and let it spread on its own
Let the pancake batter cook on the first side. Once the top is no longer shiny and bubbles have formed, it is time to flip the pancake
Use a flat spatula or spoon to lift the pancake off the pan and flip it
Let the apple pie spice mix pancake cook on the second side for 3 to 4 minutes
Remove the pancake from the heat, place on a plate and cover with kitchen towel to keep warm as you finish the rest
Enjoy these delicious pancakes on their own or with a drink of your choice
