ZUCCHINI CARROT & ONION STUFFED OMELETTE


Stuffed omelettes are the best thing to happen to my breakfast. I always used to have my eggs just plain sandwiched between slices of bread. Then I discovered stuffed omelette, my life has never been the same! I know, sounds exaggerated, but oh so true. I have been having so much fun coming up with different stuffing for my omelette. Today I wanted to incorporate veggies, especially vibrant crunchy vegetables. This is a great way to have someone who does not like to eat veggies enjoy them. After all, most people do not like vegetables because they tend to be overcooked so in turn become mushy. The best way to make vegetables delicious is to satay them and add some spices which elevates the flavor to another level. Omelettes need not be boring, I promise this is perfect!

CARAMELIZED ONIONS SAUSAGE TOASTED SANDWICHES


Have you ever had the perfect breakfast? Well, this sandwich recipe will give you that. Speaking of sandwiches, fun fact, apparently these are not sandwiches but are called Jaffles! I never knew that. Growing up we always called them toasted sandwiches, after all they had stuffing in between them, so they are sandwiches. All my life I called them that until literally yesterday when I posted on my Instagram and a friend of mine told me they were Jaffles. True to her word, clicking on the hash tag I stumbled upon these delicious meals. There are even restaurants whose sole menu is the different kinds of Jaffles, I think I gone died and went to Jaffles heaven! That just gave me do many ideas of the kinds of filling I can fill in them! So back to my "sandwich" for now I'll still call them that 😏. The caramelized onions give these sandwiches a sweet and smoky flavour that is just awesome and really goes well with the sausages. I loved this combo, but you can check out my peanut butter toasted sandwich or my delectable tomato boiled egg sandwich and tell me which one you love the most.

SESAME MAHAMRI


Mahamri is a delicious coastal snack that is known and famous for its aroma of cardamom, a sweet spice and delicate taste of coconut. You can use coconut milk or cream. I think dessicated coconut works as well, that reminds me, I think I should cook with dessicated coconut next time. For my first mahamri they turned out pretty delicious, I know a soon to be favorite in the house. In unrelated news, is it just me who loves the smell of yeast fermenting or what? Mahamri is unique in that you only cook with yeast whereas for Mandazi, you can cook them using baking powder. Try something new today with this delicious sesame seeds mahamri, I promise, you will love.

LEMON MANDAZI


First of all, let us talk about the aroma of these lemon mandazi! Citrus fruits have natural aromas that get you excited, and I love me some lemon, in bread, cakes, salad, pancake or crepes, drinks and even chicken! Mandazis are best eaten warm with your favorite drink like tea, coffee, juice or even yoghurt. When it comes to mandazi, I love them hollow at times while other times I love them with a little bit of flesh, especially if I am craving Mandazi. Family loved the orange Mandazi but these were a constant hit, with no left overs to hide away!

MINI CINNAMON MANDAZI


Happy Sunday! I always look foward to Sunday mornings because I get inspired to make delicious breakfast without having to worry about time. Lately I'm having mandazi cravings, after that yummy orange mandazi, I still want more. Every body loved that orange flavour in mandazi plus the vibrant color. Today I wanted to add spices to get that warm sweet spiciness. Have you ever tried those recipes that are usually at the back of food packets? I always see them and just brush off, but today I decided hmmmm, what's the worse that could happen? Nothing went wrong, in fact these mandazi were delicious that my sisters were eating them before I finished cooking them. So this recipe has been inspired by the back of my mandazi flour packet with every detail followed. Have you ever tried a recipe from a food packet?

CARDAMOM VANILLA MUG CAKE


I was craving something sweet and I needed it to be fast so what is my answer to my craving, mug cake yo! Before we get into the thick of things HAPPY INTERNATIONAL WOMENS DAY! To every woman working hard to put food on the table, I salute you. Moms, sisters, aunts, daughters, nieces, grandmas every woman out there, you are special and loved. I have been thinking a lot about spices and so I decided to spice up this mug cake with one of my favorite warm spice that is cardamom. Speaking of cardamom, I used to correct people who wrote cardaMOM thinking that it was cardaMON. Am I the only one who thought that? I'm sure am not, I know you thought that too or are still thinking in that direction. Anyway apart from having a fantastic aroma, cardamom has some great health nutrients that benefit your body as a whole. To think that I lived my life without spices! I shudder. This mug cake turned out fluffy soft you would think it was baked in the oven. What has been your favorite mug cake flavour so far?

CARAMELIZED ONION SAUSAGE & SPINACH STUFFED OMELETTE


Have breakfast like a King, so they said, and so they were right. Last week we talked about the nutritious benefits of eggs and that inspired me to get into my kitchen and whip up an egg recipe. And today morning was just the perfect day to cook this delicious stuffed omelette. I love a combination of spicy, crunchy and soft. All the elements on this dish came together so well that this is my new favorite egg dish. The caramelized onions add a sweetness that contrasts with the spice of the cayenne pepper, which I love.

EASY 2 INGREDIENT PAN FRIED TOAST


Lazy Sunday mornings are made for quick and easy recipes. And what is more easy than a two ingredient recipe that takes only minutes to prepare? I love pan frying bread because it only takes a few minutes and there's not much washing after. For the toppings you can choose to add fruits like strawberries, banana, grapes or even mango; syrup you can go with maple, blueberry, strawberry or chocolate syrup or you can generously sprinkle with icing sugar, cinnamon or nutmeg. This pan fried toast can be eaten with eggs, bacon or even veggies. I love how crunchy the toast is all crumbly in your mouth and awesomely delicious!

ORANGE ZEST MANDAZI


Last week of February guys, how has time flown so fast? I had fun this month and I must say it's so far the best February ever! It has been a while since I cooked Mandazi so today I'm bringing you Orange flavored Mandazi. Oranges have such a citrusy flavor that brings vibrant and sort of tropical aroma. I used yeast for these Mandazi because it makes them light yet soft, plus I just love the smell of yeast fermenting in the dough! I made lemon zest mandazi that were to die for! So it was only fair that another citrus fruit made it into my mandazi! Another thing I used was mandazi flour instead of the regular all purpose flour. I've never used Mandazi Flour before and I must say it is perfect for Mandazi. You will definitely enjoy these delicious orange zest mandazi that will become your favorite😋😋

RED VELVET CREPES - 7 DAYS OF RED VELVET


Crepes have always been the very best way to wake up to breakfastbreakfast, now add red velvet version and your valentine will be happy for such a delicious treat. I have really been thinking about love. What makes the heart beat so fast whenever you see that person that your mind, soul, heart and body has decided that they are the one. I have been in love before and it was the best experiece I had. I miss that. Looking forward to what this Valentines Day has to bring. Back to crêpes. Red velvet crêpes are easy and so fun to make, especially if you are making them with kids. You can make them even more romantic by cutting them into heart shapes.

It's Saturday people! I'm excited for the weekend though I do not have any plans. Just think, a day like today next week Valentines Day will have come and gone. Engagements will have happened, heartbreaks will have happened, blind dates will have happened, marriages will have happened, so much will have happened. All in the name of celebrating love! Let's focus on today's 7 Days of Red Velvet recipe. Forget all the French toasts you have had and heard, this one takes the cake on flavor and decadence town. RED VELVET PANCAKES - 7 DAYS OF RED VELVET


I'm listening to James Ingram as I write up this post. I love classic music escape especially the 80's and 90's R&B. The music was timeless, evoking emotions that you never knew you had. His songs remind me of being in love, puppy love. When you thought a certain boy was your world and the very essence of your being was him existing. I chuckle at the memories but I miss such kind of love, filled with innocence, pure bliss and devotion to being each other's only admiration. Love has changed, I think, it has become to some extent selfish, indulgence and "me me me" kind of expectations. Even R&B of nowadays is filled with too much vulgar language, swear words that you wonder are you being serenaded or being insulted? I did not mean to rant, I promise, maybe its all these memories bubbling to the top. Now back to reality, food reality. Today is the first of my 7 Days of Red Velvet series and what better way to start it off than with the most delicious, perfect and romantic breakfast of all time, pancakes! Red velvet pancakes! Wake him/her to the smell of this delicious treat and you will be on your way to having a perfect morning and the perfect rest of the day. Shall we?

BLUEBERRY MUFFIN OVERNIGHT OATS


Well hello there! Two oats recipes in less than two weeks? I must really want to eat healthy this year! Why am I even surprised? I should be eating oats daily, lol! I'm kind of falling or have already fallen in love with overnight oats. I used to imagine myself eating oats and I would totally dismiss it. The truth is, you never know what is good for you unless you try it! Oats can be boring if you just have them plain. Add texture, color, spice and aromaaroma, you have the best breakfast meal you can think of. Breakfast really is the most important meal of the day, hence the need to fill up on food that has immense nutritional value and keeps you full the whole day. You can never go wrong with oats, just add your favourite toppings and you have a complete meal for the day

COCONUT SESAME FRENCH TOAST


French Toast Tuesday. That's what I'll be doing every week. I don't know but, French toasts are becoming my new favourite breakfast option. You can literally top the french toast with jam, honey, fruit, maple syrup or sugar for a sweet dessert or making savoury with your favourite sauce like ketchup, mustard or chilli sauce. If you want dairy free french toast, you can use orange juice, wine or rose water to soak the bread before frying. I love wholewheat bread because it is not only healthy but dense and will soak up the liquid without breaking apart. I like the French because they eat the toast as a dessert not as breakfast like most of us do, well, they did invent it so they decide how to eat the french toast.

MANGO CHIA OVERNIGHT OATS



I'm starting or rather continuing healthy eating with oats. Overnight oats to be precise, fast, quick and filling. The best part of making overnight oats is that you can top up with fruits, nuts, granola, seeds or even chocolate. It's mango season again and I thought why not make it a fruit oats meal that is vibrant and tropical plus of course delicious! I had fun making the strawberry one so this was even more exciting coming up with the flavor combinations. Oats contain carbohydrates, fiber, protein and good fat which gives the body the daily recommended nutrients and keeps you full for the rest of the day. This is turn lowers the risk of hear disease and reduces the level of blood cholesterol. Mangoes on the other side give you Vitamin C and folate while chia seeds are rich in protein, calcium, iron, carbohydrates and good dietary minerals. Combine these three ingredients and you are on your way to a filling healthy breakfast or snack option that will leave you satisfied and peace of mind. Mangoes are still in season so you have to take advantage of them to add delicious fruits to your diet. Overnight oats are great because you use minimal effort but the next day you have breakfast ready to go that has all the elements of healthy eating and/or snacking.

COCONUT PEANUT BUTTER PANCAKES



I love peanut and if I could I would eat it every other day. Whether it's whole roasted peanuts or smooth peanut butter, I just love this stuff! Reminds me of when we were young back in the 80's when peanut butter was a new thing and it was a reserve of the "wadosi" (rich folk), we would really envy those kids who came with bread slices smeared withe the peanut butter while we had plain toasts, seems ridiculous but when you are a kid in kindergarten you always think that the other kids have better lunches or tea break snacks. Then came this advert for the skippy peanut butter, we would always sing along to it and really bug mum about buying 'skippy peanut butter'. Well she gave in and bought us the peanut butter, what? You'd think we had won the lottery! Needless to say, after that it was a regular addition to our breakfast and we thoroughly enjoyed making the other kids jealous and even bribing them with 'if you don't let me in the game, I won't give you my skippy peanut butter bread', nice memories hehehe. To bring back those memories, I though I would make peanut butter pancakes and add more deliciousness by adding coconut. Those two flavours just work wonders on your pallet.

FUNFETTI SUNDAY BRUNCH PANCAKES


Happy Sunday Funday Lovelies! We are already halfway the first month of 2019 and it's exciting to  see how fast the days are going! I love Sundays! It is just one of those lazy days that you want breakfast in bed with some soothing music and yummy scents coming from the kitchen. Dreams are valid yo! If you are single like me, then you will just have to give yourself that breakfast in bed and enjoy it all by thyself, which is fun most times, especially when you have made yourself this decadent obsessively good apple cinnamon french toast and you absolutely  DO NOT want to share! Today I just woke up with a craving for some pancakes, I have several pancake recipes that you can find all over the blog, I needed something different. And since I was feeling festive and saw some rainbow sprinkles staring at me in the kitchen, I knew what I had to do. These funfetti pancakes are fluffy, pillowy and exciting to bite into! We all want to get fluffy pancakes so here are a few tips I have learnt in making pancakes. To get fluffy pancakes include baking powder or baking soda in pancake batter since this will create essential bubbles that are crucial in giving you that fluffy feel.  Eggs enable the batter to rise since they provide the pancakes with structure while butter not only adds flavor but give the pancakes moisture and a smooth richness. Do not over mix your pancake batter if you want fluffy pancakes and let you batter rest before using, you can even refrigerate for a few minutes before cooking. The best way to ensure your pancakes are fluffy is not using too much heat, since they will burn yet the middle in raw, if too low the pancakes will end up being tough and rubbery.

SIMPLE CHOCOLATE CREPES


I love chocolate and if I could eat it every day I swear I would. Crepes on the other hand I love too and could eat every second if I could. So put chocolate and crepes in the same sentence and you have me gone into foodie paradise. These very easy chocolate crepes are decadent and can be served up as a dessert, for breakfast or even brunch, every minute of the day if you will! As much as you can devour these delicious chocolate crepes on their own, you can add extra toppings to make them that much extra. Toppings include fresh fruit, whipped cream, cream cheese, ice cream, dulce de leche sauce for a sweet taste.  You can decide to pair the topping options like using peanut butter and bananas, whipped cream and strawberries, jam and peanut butter or even apples and honey.  When it comes to the batter since the crepes are so thin you want a super smooth chocolate batter. The pan should be hot so that they cook quickly enough. Add enough batter to cover the bottom of the pan completely so that the crepes are not heavy. I love how light and airy these chocolate crepes turned out and I finished a whole batch without blinking! That’s how good these are and you will definitely be making them on a daily basis, not only for special occasions but just because.
