This was a perfect smoothie that was actually made with the left over fruits that were in the fridge. Call it refrigerator clearing mode. We were travelling to the village for the Christmas holiday and so we decided to clear rhe fridge of anything that could go bad while we were away. So there were lots of fruits that we could not just eat all at once, so I decided that a smoothie would be perfect. Even if there was left over, we would carry as we travelled on the road trip. I love the mint that adds such a vibrant tropical vibe and taste!

PINEAPPLE RAITA
Raita makes a perfectly easy cooling sauce to cover your
delicious spicy Indian dishes and add a touch of creaminess to any meal. I made this simple cucumber mint raita that pared well with my chicken curry dish. Pineapple raita is the perfect condiment to any spicy Indian
curry and tastes best when chilled. Other fruit raitas include, Banana raita, Mango raita, Guava raita, Grape raita, and Pomegranate
raita. For best results use thick yogurt since the pineapple is heavy and wet,it will easily dilute the yogurt making it wet and not too delicious. You want the pineapple raita to be creamy and thick to enjoy it even more. For my green onion flat bread I served with a delicious onion raita that blended so well with all the flavors of the flat bread. This pineapple raita is fresh, creamy,spicy yet sweet at the same time. You will not want to eat Indian cuisine any other way or without a raita dip to accompany it!

7 DAY INFUSED WATER CHALLENGE DAY 1 - PINEAPPLE JALAPENO WATER
I did an Infused Water recipe last week and ever since I have wanted to do more of them. Drinking the Citrus Cucumber water was so refreshing I was wondering where it has been all my life! Infusing your water with fruits, vegetables, spices and even edible flowers makes drinking water fun and wholesome. These ingredients will give your water a sweet and refreshing taste. When infusing water, the longer you let it rest the stronger the flavour will be. For Citrus fruits with peels on however, you want to drink the water within a few hours because it tends to get bitter. You can reuse the fruits for more batches but not more than three times.Now I have decides to have a 7 Day infused water challenge where I will make and post different infused water combinations. The first one is Pineapple and Jalapeno Pepper Water. Get your sweet tangy flavour from the Pineapples and a hot kick flavour from the Jalapeno. You can remove the seeds from the Jalapeno if you want a milder chili taste. I will do the seven days infused water challenge and give you my findings on these flavourful waters

PINEAPPLE COLESLAW SALAD
Hope your week has been great. Seems time will keep running like it wants to complete a marathon lol! Anyway so I needed something light, fresh and colorful to add to my table on this dull dreary weather in Nairobi city. The only thing that came to mind was a salad. Quick and easy to whip up and since I had enough vegetables I went for that idea. I have always loved Coleslaw especially when I have it with French fries and rice dishes. I knew this would go great with the left over Pilau Rice I had yesterday. Today I didn't want just the usual normal plain Coleslaw salad, so I decided to search for ideas to up my Coleslaw.I saw pineapples and I was sold! I lie to you not when I tell you that this is the best Coleslaw Salad you will ever eat. It had all the crunch from the Cabbage and Carrots, a tangy taste from the garlic (I had never put Garlic in my Coleslaw salad until now, best decision ever!) and tropical ecstasy from the Pineapples. It's unbelievable how good this Coleslaw salad turned out. Try it and see how much great reviews you will get, I got plenty!
