Easy, Wholesome, and Full of Flavor! This savory egg dish is quick, nutritious, and loaded with the goodness of sautéed veggies. It’s an ideal meal when you want something filling yet simple, and the best part? You can easily make it dairy-free or vegan-friendly. Start your day with green pepper and onion scrambled eggs, an easy, protein-rich breakfast packed with flavor and fresh veggies. Perfect for low-carb mornings! Today I woke up with a craving for eggs. The kind of craving that doesn't let you think about anything else until it’s satisfied. The kind of craving that practically drags you out of bed, straight to the kitchen. It’s been chilly in Nairobi lately. The cold wraps around you. It makes you want to curl back under the covers with something warm and comforting. I didn’t want tea this morning, which is quite unusual for me. Tea is typically my go-to on cold mornings. I enjoy a warm cup between my hands as I gather my thoughts for the day. But today was different. I wanted something heavier, something that would fill me up, warm me from the inside, and satisfy me deeply.

So there I was, standing in front of my pantry, searching for something quick yet hearty. And then my eyes landed on two ingredients that were practically begging to be used: green pepper and an egg. Simple? Yes. But something about that combination sparked an idea. I had one egg, which ruled out anything too fancy like a full omelette or frittata. Still, that didn’t mean I couldn’t whip up something flavorful, cozy, and satisfying.

I adore a creamy scrambled egg with tomatoes. It is my usual go-to. This morning called for something a little different. A little sharper. Something that would wake up my taste buds and give my body the comfort it craved. So instead of reaching for tomatoes, I reached for onions and that lone, beautiful green pepper. The idea of sautéed onions mingling with green peppers and soft, fluffy scrambled egg was already making my mouth water.

Cravings are a funny thing. They have a mind of their own and can lead you down unexpected culinary paths. This wasn’t the breakfast I had planned, or even thought of the night before. But here I was. I was dicing a green pepper and slicing an onion. I was already imagining the aroma that would fill my tiny kitchen. I didn’t want a bland egg dish. I knew it needed something extra. A spice kick would lift the whole flavor. So I reached into my spice rack and added a dash of paprika, and a tiny bit of cumin. And then, the finishing touch, fresh green chili chopped finely. The green chili gave the egg a subtle heat. It was the heat I didn’t know I needed. It gave a kind of warmth that spreads through your chest. This provides your body with a mini wake-up call.

All of this took less than ten minutes from start to finish. Yet the end result was a meal that felt thoughtful, intentional, and deeply satisfying. The egg scrambled into soft folds with the onions and green pepper giving it texture, crunch, and sweetness. The spices added depth and complexity, and the green chili? That kick was everything.

Now, I know what you're thinking,  can one egg really be enough? Surprisingly, yes. Pair that egg with vegetables and spices. Give it a little love and treat it like the star ingredient it is. One egg can go a long way. It's all about how you prepare it, and more importantly, how you enjoy it. There's something empowering about being able to create a full, flavorful meal out of humble ingredients. You don’t always need a fridge bursting with food or a fancy recipe with ten different steps. Sometimes, all it takes is an egg and a vegetable. Add a spark of creativity, and your day turns around.

Eggs are one of the most versatile foods we have in our kitchens. They’re comforting, quick, and endlessly customizable. You can fry them, scramble them, poach them, or bake them. They’ll still show up with that golden, protein-rich goodness. They’re like that one friend who’s always reliable no matter what kind of mood you’re in.

But more than that, eggs give you room to personalize your meal. You can make them spicy, tangy, savory, or even sweet. Add vegetables, herbs, cheese, or sauces , and you’ve got yourself a different dish every time. There are a million ways to scramble an egg, and none of them are wrong. Some people like their scrambled eggs soft and creamy, others prefer them a little firmer with golden-brown edges. Some cook them slow over low heat, others prefer a quick sizzle over medium-high heat. It really depends on your mood,  and what you have in the fridge.

Personally, I love the richness that onions bring to the mix. Sautéing them until they’re slightly caramelized brings out their natural sweetness, which balances beautifully with the sharpness of green peppers. If you are like me, you love a bit of crunch in your meal. The green peppers provide the eggs with that satisfying bite. They soften slightly as they cook but still hold their own.

As for spices, well, this is where you can get playful. Turmeric can add an earthy warmth and a beautiful golden color. Paprika brings a subtle smokiness. Black pepper adds depth and heat. And cumin, oh cumin, gives that slight nuttiness that elevates everything it touches. This Green Pepper and Onion Scrambled Egg wasn’t fancy. It didn’t involve any complicated techniques or expensive ingredients. But it was perfect. It was warm, filling, and full of flavor,  exactly what I needed on a cold Nairobi morning. And more importantly, it reminded me how beautiful it is to listen to your cravings. It is important to honor them. You can turn them into something comforting and creative.

Your mood may dip. Your energy may feel low. Making a simple, flavorful meal for yourself is an act of care. It tells your body: "Hey, I hear you. Let me take care of you." So, what’s your favorite way to scramble eggs? Do you like them creamy and simple? Or are you someone who throws in every spice and topping you can find? Do you add cheese? Tomatoes? Garlic? What gives your scrambled eggs that oomph, that signature taste that makes it your own?

I’d love to hear about your favorite recipes. These could be a childhood recipe passed down from a family member. Maybe it's a crazy combination you stumbled on late one night. After all, some of the best meals come from spontaneous kitchen moments. These happen when you’re cold, hungry, and ready to experiment with what you’ve got. Food doesn’t have to be complicated to be meaningful. Sometimes, one egg, a few vegetables, and a craving is all it takes to create a moment of comfort. This morning, my Green Pepper and Onion Scrambled Egg was more than breakfast. It was a small celebration of creativity, nourishment, and simple joy.

Next time you find yourself staring into your fridge unsure of what to cook, think about what you're truly craving. Don't be afraid to get a little creative. You might just surprise yourself.

Happy cooking!
