EGGLESS CHOCOLATE ROCK MUFFINS


A simple yet delicious chocolate treat as a desert or snack. Mom used to make them for birthdays or even holidays. She used to make them plain and sometimes add cinnamon. I remember how we used to go sit in the kitchen watching mum bake. For me I loved licking the batter from the bowl, I would tell mum not to clean the bowl as I would do it for her, only to sit on the floor and lick the cake batter! Brings back so many many memories. Today I chose to make them chocolate muffins, after all chocolate should be part of everyone'd diet, don't you think?  I love muffins because they are big fluffy delicious and totally filling. I love how they look like they are pouring over the muffin tin while baking, totally satisfying and therapeutic! The almost shapeless imperfection of the muffin is what gives it that distinct. I have always made these muffins with eggs but I wanted to see how they would taste without eggs. Didn't miss the eggs whatsoever! The chocolate muffins turned out soft, crumbly yet fluffy and delicious!

SIMPLE CHOCOLATE CREPES


I love chocolate and if I could eat it every day I swear I would. Crepes on the other hand I love too and could eat every second if I could. So put chocolate and crepes in the same sentence and you have me gone into foodie paradise. These very easy chocolate crepes are decadent and can be served up as a dessert, for breakfast or even brunch, every minute of the day if you will! As much as you can devour these delicious chocolate crepes on their own, you can add extra toppings to make them that much extra. Toppings include fresh fruit, whipped cream, cream cheese, ice cream, dulce de leche sauce for a sweet taste.  You can decide to pair the topping options like using peanut butter and bananas, whipped cream and strawberries, jam and peanut butter or even apples and honey.  When it comes to the batter since the crepes are so thin you want a super smooth chocolate batter. The pan should be hot so that they cook quickly enough. Add enough batter to cover the bottom of the pan completely so that the crepes are not heavy. I love how light and airy these chocolate crepes turned out and I finished a whole batch without blinking! That’s how good these are and you will definitely be making them on a daily basis, not only for special occasions but just because.

CHOCOLATE BURFI


Love chocolate? Love Indian sweets? Well look no further then than these delicious chocolate burfi. There are so many types of burfi/ barfi that include, Kesri pedha: saffron, flattened yellow round. Kaju barfi or kaju katli: cashew, light tan diamond. Pista barfi: pistachio, forest green diamond. Cham cham: pink and white, shaped like sushi rice balls. Doodh peda: kewra oil and pistachio, flattened dark tan round. Badam pak: rose water and almond, brown diamond. Walnut barfi. Barfi fon or barfifon: fig, pink and yellow colored. Gajar barfi: carrot, square and orange colored. Coconut barfi: coconut, sugar, and milk, square and yellow colored. Sing barfi: peanuts, square and brown colored. Besan barfi: gram flour light yellow diamond and Dodha burfi: peanut. So far I have made condensed milk coconut burfi that was too delicious!

CHOCOLATE NO BAKE COOKIES


Cooooookies... Chocolate cookies.. I feel like the cookie monster! Oh yeah, Happy New Month! Its September people! I don't know why I am so excited but this is the mood I want to start with hoping it is infectious until the end of the month. So new month, new recipes. My theme for last month that featured avocado recipes sort of brought back all the cooking juices that had somehow evaporated into the daily life of this daily grind that we call life. Still my need to be in the kitchen overrides every emotion I might have been having before. And what better way to start the new month than with chocolate, chocolate cookies to be precise. Add coconut, honey, butter, vanilla and you have foodie garsms right there! So let's get into the chocolatey goodness of it all

DARK CHOCOLATE AVOCADO MOUSSE


If you want to treat yourself to an extra fancy dessert, ready in less than 10 minutes that will satisfy your sweet tooth, a mousse is the perfect dessert. Make it even more healthy by using Avocado as the main best ingredient because this mousse is dairy free, gluten free and refined sugar free. A mousse is a soft prepared food that usually incorporates air bubbles to give it a light airy texture that ranges from light and fluffy to creamy and thick. You can choose to have a sweet mousse made with whipped cream and egg whites or both; or a savoury mousse made from meat, fish, foie gras, shell fish, vegetables and even cheese. Flavourings for mousses range from pureed fruits, coffee, herbs, spices and even caramel. Mousses are normally chilled before serving to give them a dense texture that's rich like truffles. 3 INGREDIENTS CHUNKY CHOCOLATE BANANA COOKIES

Happy New Month! I know it's already 6th but the month is still new. Dairy free. Gluten free. Sugar free. What more could you want to guiltlessly enjoy a treat. The best part about these cookies is that you only need three ingredients. YES. Only three.  And you get yourself a decadent chocolate snack that you will want to eat everyday. Bananas add the sweetness naturally, the peanut add a smooth crunchy texture while the cocoa powder gives the cookies that chocolaty goodness. I love treats that need very little ingredients and take minimal effort. This recipe has both. These chunky filled with delicious chocolate and "healthy" banana goodness are soon becoming a family favorite. Men, I love cookies and I cannot lie ;)

I looove chocolate! I'm a chocoholic! Anything chocolate and you got me... if I could eat chocolate everyday I would. Today I have a simple yummy chocolate glaze recipe that you can literally pour on any sweet treat that you want. There is usually no limit when it comes to chocolate sauces, it just adds that much needed deliciousness!The chocolate glaze has only 3 ingredients and its done within a few minutes, and you'll be licking your spoon once you are done!

FLUFFY EGGLESS CHOCOLATE PANCAKES


Chocolate for breakfast? Pancakes for dessert? I say heck yeeeah! It's the Weekend! And what are weekends meant for? Pancakes! It's a Pancakes necessity... cue Mowgli singing the 'bear necessity song' I love animations, they just bring out the child in you, carefree, full of dreams and fantasies... I miss that. I love pancakes and I cannot lie... you see where this is going... waking up with songs in your heart just means that the day is off to a great start. It being a weekend just makes it that much more fun. Chocolate and Pancakes, my two favorite things.These Eggless Chocolate Pancakes turned out so fluffy and light despite them looking so heavy. The trick is not to overbeat or overmix the batter. I ate 3! Just had to put it out there . This is a desert or is it breakfast that I will be making again and again, and not just for the weekend. Hey, who said you cannot have dessert for breakfast or breakfast for dinner? Break some rules, it's a lovely life, whip it whip it whip it real good...okay I need to stop with the random music...haha! CHOCOLATE PANCAKES FOR BREAKFAST

I can still taste those fluffy almost melt in your mouth Chocolate Pancakes. Yum! I never though anything could be this delicious! I can't stop raving about these Chocolate Pancakes, and when you make them you will not stop either. I give you my word! I'm a Chocoholic so anything with Chocolate I will be biased and choose it every time. Pancakes are just the best way to wake up to breakfast, so imagine adding Chocolate, do I have chocolate lovers in the house? I wanted to make something unique so I chose to give my pancakes a different shape from the round ones. I had heart shaped cookie cutters that I always knew would come in handy.They just give that perfect presentation and an evenly layered stack of Pancakes. If you want a deeper Chocolate flavour add Chocolate chips to the pancake batter. I just used regular Cocoa powder but will definitely add Chocolate Chips next time. This recipe is Breakfast and dessert rolled into one! Okay enough 'sed' lets do this! 😊😆

CHOCOLATE MUG CAKE

I love to be adventurous in the Kitchen and one of my favorite all time past times has always been baking. So imagine me stumbling upon a new way of having your cake whenever you feel like it and at your own convenience.. the Microwave Mug Cake! This easy and very simple cake takes less that five minutes to bake, comes in a single serving - an excuse to be selfish, well, once in a while anyway, it's a dessert that will perk you up each time your sweet tooth comes knocking at your mouth.I knew I just had to have this Delicious, moist, melt in your mouth dessert without delay, I had never tasted a Mug Cake before but the pictures I saw just convinced me that that is exactly what they would be, a delicious little food Heaven in my mouth. So I decided to first start with Chocolate and then all the other flavors and combinations that come after. Believe me, this will not be the last of making Microwave Mug Cakes, watch this space for more of my adventures with this new way of creating yummy desserts.
