I know, it’s already February but it still feels like a new year. Happy New Month! 2020 came and went just like that. It had been a tough year with all the pandemic issues that we had to deal with. I thought that now that we are quarantined, I would have the chance to cook dozens of meals but I guess the inspiration was lackluster to the point I was always happy that there were left overs. No need to cook. I hope this year will be a bit better and hoping for the best. So to start us off, ill share with you my top 30 recipes on my YouTube channel. MINTY PINEAPPLE MANGO SMOOTHIE


This was a perfect smoothie that was actually made with the left over fruits that were in the fridge. Call it refrigerator clearing mode. We were travelling to the village for the Christmas holiday and so we decided to clear rhe fridge of anything that could go bad while we were away. So there were lots of fruits that we could not just eat all at once, so I decided that a smoothie would be perfect. Even if there was left over, we would carry as we travelled on the road trip. I love the mint that adds such a vibrant tropical vibe and taste!

UJI YA UKWAJU NA NDIMU (TAMARIND & LEMON PORRIDGE)


I love my porridge sweet and tangy and this is exactly what this Uji (porridge) is! I recently made some UKWAJU Juice and I knew this was the first thing I would be using the juice for. Most of the time people tend to think that Uji is usually for kids but its healthy, delicious and nutritious. This uji I made using Wimbi flour thats filled with lots of nutrients for the body, both kids and adults! Rich, creamy and thick, what more would you want from hot uji on these cold days?

HOW TO MAKE UKWAJU (TAMARIND) JUICE


My earliest memories of Ukwaju date back to when I was really young, less than 10 years old. Sighs "seems like ages ago lol" We used to go visit our grandma every holiday after closing schools. That is every April, August and December, like clock work we knew our holidays would be spent in "ushago" upcountry. And we loved it! Partly because the chores would be less, you know, its true that grandmas always spoil their grandkids 😉... I can't really remember which month it was or if it was those 3 months but the ukwaju (tamarind) tree was always ripe. Since the tree was too rough to climb, we would use long sticks to beat the pods out of their stems. Then we would gather on the ground, peel off the top later and suck the hell out of all those yummy insides. They do have a tangy sweet taste which we loved anyway. Then after the holidays, we would carry some back to town and mom would make fermented porridge and add the ukwaju while cooking. It was the best tasting porridge ever! Now fast foward to now, and being a grown up, I know the many uses of the ukwaju (tamarind) other than eating and adding to porridge. So my first ukwaju recipe is how to squeeze out the delicious juice so that you can use it for many other recipes. Have you tasted Ukwaju before? What has been your experience?

It was supposedly invented at the Carnivore restaurant in the Langata suburb of Nairobi, Kenya.

I'm loving smoothies right now not only because they are healthy but delicious too! Beetroot is not really every persons cup of tea, most guys I know do not like beets. Healthy breakfast is the best way to start your mornings. Since I love avocado my first smoothie on my blog is avo-strawberry. This smoothie is creamy, filled with great nutrients like Calcium which is wonderful for your bones. The best part about smoothies is that you can substitute lots of ingredients to suit your diet and preferences. If you want sugar free, you can skip the sweetener, if you don't use dairy you can add water instead or use plant based milk like almond or soy. Smoothies are great breakfast options, great for weight loss or even a post work out drink.

ORANGE SPICED SIMPLE SYRUP


Take your simple syrup game to another level by making it spicy, sweet and aromatic. A simple syrup is usually a liquid sweetener that is usually perfect t in cocktails,drinks or even for decorating cake. It can also be used to sweeten foods like fresh fruits and baked goodies. When it comes to making the simple syrup the ratio of sugar to water is usually between 1:1 or 2:1 respectively. Then the mixture is simmered for around 10 minutes until the liquid has reduced to about half of its original quantity or volume. Now that is the basic way of making a simple syrup but you can add character to your simple syrup by spicing it up. And that is where flavoured simple syrups come into. Common flavours include lemon simple syrup, vanilla simple syrup, cinnamon simple syrup, ginger simple syrup, and even mint simple syrup among others. The flavored ones are best for topping sliced fruit, pancakes, baked goods and even ice cream. Flavored simple syrups can also be drizzled over desserts or used to glaze them, to sweeten lemonades, iced coffee, cocktails, iced tea or other cold beverages. Simple syrups can be stored in airtight containers or jars for up to 6 months or more. If you want to prolong the shelf life even further, you can add a small quantity of vodka to it, about one shot of vodka into two cups of simple syrup. A flavored or simple syrup takes a few minutes to prepare yet you can use it in countless ways!

Enjoy a refreshing and healthy drink this hot season. It's almost the end of January that has been generally hot. It is this time that you need to be hydrated well to avoid energy depletion. The best way to stay hydrated without just having to take water is to have iced tea. So what is iced tea? Iced tea is a form of cold tea. Though usually served in a glass with ice, it can refer to a tea that has been chilled or cooled. It may or may not be sweetened. Iced tea is also a popular packaged drink. It can be mixed with flavored syrup, with multiple common flavors including lemon, raspberry, lime, passion fruit, peach, orange, strawberry, and cherry. While most iced teas get their flavor from tea leaves, herbal teas are sometimes served cold and referred to as iced tea. Iced tea is sometimes made by a particularly long steeping of tea leaves at lower temperature. Some people call this "sun tea". In addition, it can be left to stand overnight in the refrigerator. Iced tea is popular in Austria and is commonly known as Eistee (ice tea); it is usually drunk heavily sweetened.In Brazil, particularly in Rio de Janeiro, one of the most popular beverages is mate or chá mate. In Canada, iced tea refers to sweetened iced tea, flavoured with lemon. The iced tea is usually made at home from drink powder or obtained in bottles or cans. Sweetened green teas and those flavoured with raspberry, peach, or pomegranate are becoming more common via marketing efforts. In china Common types of iced tea are black, green, oolong and lots of herbals as well. Iced herbal teas are especially popular in the hot summers, where "yin" or cooling herbs are used to make tea such as chrysanthemum, kuding tea  etc. Cooled tea (but still warm) was popular throughout ancient times. 7 DAY INFUSED WATER CHALLENGE DAY 7 - LIME WATERMELON WATER

So day 7 of my 7 Day infused Water challenge which is the last day and today we have Lime Watermelon Water. It has been great getting to taste the different infused waters and I have a few of my favorite that I will definitely be drinking often. Lime has many health benefits that include weight loss, skin care, eye care, improved digestion, respiratory disorders, urinary disorders and relief from constipation, and treatment of scurvy, piles, peptic ulcer, gout, and gums. Many studies have suggested that increasing consumption of plant foods like Limes decreases the risk of obesity, diabetes, heart disease and overall mortality while promoting a healthy complexion and hair, increased energy and overall lower weight. Limes are great for asthma prevention. The risks for developing asthma are lower in people who consume a high amount of certain nutrients. One of these nutrients is vitamin C, found in many fruits and vegetables including limes. Lime help in boosting the immune system. Foods that are high in vitamin C and other antioxidants can help the immune system battle germs that cause a cold or flu. Limes will assist you have healthy skin. The Vitamin C in Limes can help to fight skin damage caused by the sun and pollution, reduce wrinkles and improve overall skin texture. Eating higher amounts of citrus fruits like Limes may lower ischemic stroke risk for women. Day 6 of my 7 Day Infused Water Challenge is here! So excited with today's infused water combination. Refreshing Water Melon and Hot Spicy Jalapeno. Delicious! I'm on day 5 of my 7 Day infused water challenge. Today I will be having Cucumber Lime Ginger Water. Such an interesting combination that I am so excited to make it. 7 DAY INFUSED WATER CHALLENGE DAY 4 - LEMON CUCUMBER WATER

It's day 4 of my 7 Day infused water challenge and I'm not bored with drinking these waters. I actually look forward to each different fruit and vegetable combinations the following day. If water tasted this good I probably would be drinking it every minute. Cucumbers have an extraordinary amount of water (about 96%) that is naturally purified, thus making the water content much higher in quality than ordinary water.  Cucumbers are extremely beneficial for overall health, especially during the summer since they are mostly made of water and important nutrients that are essential for the human body.
