VEGAN COCONUT CARROT SOUP


The warm season is peeking at us and what better way to keep cozy than warm soup. This carrot soup is the best you will ever have! It's dairy free, gluten free and oh so creamy. Perfect for a starter at dinner or even just a main meal because it is hearty and filling. Adding ginger and garlic takes the flavors to another level. Just like you know how much I love coconut, using both coconut oil and coconut milk makes it perfect for a Vegan diet. Most people do not like cooked carrots, so this is just perfect for flipping their taste buds.

VICHYSSOISSE SOUP


Soup Sunday is here with us and I'm going all French. With Vichysoisse Soup! Layered with rich flavour, velvety smooth and aromatic this soup is what you should be having almost daily. Vichysoisse soup is made of boiled and pureed leeks, onions, potatoes, cream and chicken stock. Traditionally the soup is served cold but can also be eaten hot. When cooking with leeks you need to clean them thoroughly since they tend to have dirt stuck in between tr stalks. Trim off the roots and tough green leaves, slit leeks length ways to the center, hold root ends and run under cold water to wash out the dirt. You can use coconut milk to add extra richness and a tropical flavour. I'm loving soups and I always look forward to Sundays when I get to make delicious soup.

CHUNKY POTATO BROCOLLI SOUP


It's still cold here in Nairobi and soup is just the best way to curl on the sofa and watch Master Chef Australia, my favourite show, or you can watch your favourite movie. Either way you will enjoy this delicious chunky soup. I've become a bit obsessed with soup since realizing that they are healthy filing and most importantly delicious! When it comes to chunky soup, you can really decide to have it as the main meal since it is heavy and would go well with just a salad.

ICED CUCUMBER SOUP


Hello soup lovers! It's Sunday and I have decided to make soup a weekly thing, so from now on we'll be having Soup Sunday! Homemade soups are totally delicious and utterly versatile. A chilled soup will make for a simple, Cook ahead starter for any dinner or lunch party. You can use chicken stock to make this soup but vegetable stock makes it great for vegetarians and even vegans, skip the buffer too and use coconut oil or olive oil. A quick tip when it comes to stocks especially homemade ones is to freeze in ice cube trays then once frozen solid you can pack the cubes in freezer bags. Then dilute them in water before using. That way you always have stock in hand to make your soups. Since this is a chilled soup, you can pour into a rigid plastic container, leaving head room for expansion, then label and freeze. To serve warm, just reheat, stirring frequently until heated through.

COCONUT AVOCADO SOUP


Want something extra amazing to drive away this cold? Why not try some warm hearty, very hearty soup. And not just any soup but my awesome coconut avocado soup! My #AvocadoAugust chronicles continues... Soup is one of those meals that you mostly get at a restaurant as a starter with some awesome sweet bun to go with. I love those mini buns that go with soups, you can literally devour all of them! But you don't have to wait to go to a restaurant to enjoy soup. Why not make your own delicious version that is filled with extra goodness and healthy nutrients. In this soup you get that smooth richness from the avocado, some tropical fragrance from the coconut milk and of course the spicy kick from the red chilli! Such a vast combination of flavours that work out so well. Oh, and just a great tip, if you want your Avocado to ripen faster, place it in a brown paper bag with a ripe banana or tomato. Enjy this delicious potato soup also once you are through downing this one.

CHILI BLACK PEPPER POTATO SOUP


I love a bowl of warm soup to keep me cozy and cuddled. It's almost like getting a hug from the inside out. Potatoes are generally hearty, so add to that coconut milk and some heat from the red chilli and you have a match made in a bowl. I had so many potatoes in the house and I realized the only thing I have yet to make them with is soup. I have come to realize that soup is not just one of those remedies for colds or even for when you are sick. This delicacy is fit for every occasion and meal times. There are so many kinds of soups that I have yet to taste but this year I must taste at least 10! Whether it's through cooking at home or at a restaurant I'm uping my soup game.  So L'ego! Always wanted to use that somewhere, not sure it fits but meh, I still got to use it! This chilli potato soup will have you 'bowling' over - pun intended- for more soup. A burst of lovely flavours that meld in your mouth creating a buzz in your tummy.
