HOLIDAY CARROT FRIED RICE


I made this Carrot fried rice over the Christmas holiday last year. I posted the video on my YouTube Channel. It was part on my 2019 VLOGMAS series which I enjoyed completely. This recipe is simple since you can use any left over veggies in your fridge and rice that you had before. This is great especially when you are home and are too tired to cook a meal from scratch.

VEGAN COCONUT CARROT SOUP


The warm season is peeking at us and what better way to keep cozy than warm soup. This carrot soup is the best you will ever have! It's dairy free, gluten free and oh so creamy. Perfect for a starter at dinner or even just a main meal because it is hearty and filling. Adding ginger and garlic takes the flavors to another level. Just like you know how much I love coconut, using both coconut oil and coconut milk makes it perfect for a Vegan diet. Most people do not like cooked carrots, so this is just perfect for flipping their taste buds.

CARROT CHAPATI


Want to add vibrant color and taste to your simple chapati, why not add grated carrots! Chapati as you know has always been my favorite meals to cook and I always try to find ways to make them more delicious. Whether it is wholewheat or all purpose flour, chapati is a delicious meal that can be served for breakfast, lunch or even dinner. The best part is that chapati is great for warming up to eat the next day. To ensure that they do not dry up and become dry and hard the next day, you need to cook them soft and this method I used guarantees you soft chapati that will keep soft even for 3 days!

BUTTERED PAPRIKA CARROTS


Delicious is an understatement when it comes to describing this dish. I am one of those many kids who did not like cooked carrots. Raw carrots I would eat for days without any trouble, I especially loved dipping the raw carrot in salt then munching like a sweet. Cooked carrots on the other hand, was torture eating them. I would try my hardest to eat, but would time when mom was looking away and drop them on the floor, to pick up later when no one was watching. Horrible, I know! But I h.a.t.e.d cooked carrots. I guess it was the way they were cooked so they turned soggy and tasteless and so I could not stand them. Fast forward to gown up me and I realized there are so many ways to cook carrots that made them delicious and not soggy at all! In my cooking adventure I learnt that vegetables need to be cooked for very little time, not only to maintain their crunch but not to loose the awesome nutrients that were in these veggies. Adding spices to carrots also made them that much more delicious as a side dish and even the main dish. Today's recipe was inspired by my need to have something quick, delicious and can be eaten both as a snack and a main meal. Buttered carrots is a lovely way of bringing out the flavour of this vegetable without too much hustle in the kitchen. What are some of the foods that you hated as a child but now enjoy as an adult? HOMEMADE FRESH CARROT PASTA DOUGH


I love homemade food, so fresh, so fun to make and let's not forget healthy too. Pasta has always been my favourite dishes to whip up anytime I am craving comfort food. I made the first pasta dough that turned out great and I knew I would be making other flavours. Only four ingredients and you have this delicious pasta dough. It really does not take up much of your time and in the end you have this amazing batch of pasta dough that you can use for several meals. To make it even more healthy you can your wholewheat flour which h will give the pasta a lovely texture and flavour. Making carrot pasta dough is a cheats way of adding veggies into your diet. This is also a fun way to include the kids in making thus carrot pasta dough. You can choose to make fetuccini pasta, ravioli, or linguini pasta the ideas are endless! Have it fresh or dry it out first then make delicious meals out of the pasta. A great soul food right there.

FRESH GINGER CARROT DRESSING


Make your salads great! With amazing dressing! I love how tangy, sweet and aromatic this salad dressing is. Salad dressings can be sweet, spicy, light or even thick depending on what you will be pouring over. Some of the types of salad dressing include thousand island dressing, wafu dressing, tahini, blue cheese, Italian, ginger, honey mustard, French salad among others. Dressings make your plain ol' salad exotic by upping the flavour and taste. Fresh ingredients with a little sesame oil to add that nutty flavour gives you this perfect salad dressing that will take you for several salads that you will prepare as starters, lunch or dinner. Add this to my pineapple coleslaw salad or even the avocado cucumber salad to add vibrant flavors that match perfectly
