PAPRIKA CUMIN KENYAN CHIPS MASALA


I love! Love! Love! Chips Masala, which is my other favourite dish that brings me awesome childhood memories. We had several kiosks in our neighbourhood where you could get what we called "chips mwitu" (not restaurant chips) these fries were very delicious and sold for as little as Ksh. 10 ($1) per packet. By the time you are done eating you'd have spent up to Ksh. 100 ($10) because they are just too addictive! There are very few restaurants that I trust to cook the best chips masala/masala chips. I love my homemade version because you can add whatever spices you want! I love spicy food so this recipe is quite spicy, which I love, you can have more or less spice as you want.
INGREDIENTS


2 Bowls Left over French Fries
1 Teaspoon Cumin
1 Teaspoon Garam Marsala
1/2 Teaspoon Paprika
2 Onions
1 Tomato
1 Teaspoon Ground Turmeric
Chili Tomato Sauce
1 Teaspoon Chili Flakes
2 Tablespoons Dhania (cilantro)
2 Tablespoons Vegetable Oil
1 Teaspoon Black Pepper

METHOD


Add chopped onions to pan with vegetable oil



Fry onions until lightly brown


Add chopped tomatoes



Fry until the tomatoes are paste like


Add ground cumin


Add paprika spice


Add black pepper


Add garam marsala


Fry spices 2 minutes



Add left over french fries


You can still use fries that you just made


Mix fries into the spices well


Add ground turmeric


Add chili sauce


Be generous with the chili sauce, theres no limit to how much you can add


Add chili flakes


Sprinkle chopped dhania (cilantro)


Gently mix the masala chips


Allow to fry 1 minute


Serve immediately


Hot and spicy! Delicious and filling!

Ingredients
  • 2 Bowls Left over french fries

  • 1/2 Teaspoon Paprika
  • 2 Onions
  • 1 Tomato
  • 1 Teaspoon Ground Turmeric
  • 1 Cup Chili Tomato Paste
  • 1 Teaspoon Chili flakes
  • 2 Tablespoons Dhania (Cilantro)
  • 2 Tablespoons Vegetable Oil
  • 1 Teaspoon Black Pepper
Cooking Directions

  3. Add left over french fries. You can still use fries that you just made. Mix fries into the spices well
  4. Add ground turmeric and chili sauce. Be generous with the chili sauce, there’s no limit to how much you can add. Add chili flakes. Sprinkle chopped dhania (cilantro). Gently mix the masala chips. Allow to fry 1 minute
  5. Serve immediately
