CINNAMON PEANUT GLAZED DOUGHNUTS


I'm currently loving trying out difference flavours of doughnuts. So far this is my second doughnut recipe. I made red glazed coconut doughnuts which turned out to be a hit and so I thought about what other combinations can work. Once you have the basic recipe for making doughnuts, you pretty much have a canvas on which to work with. I wanted crunchy doughnuts so I went with crushed peanuts on top. Delicious is an understatement! You can choose to fry or bake your doughnuts either way they turn out delicious every time. I think my next recipe will be baked doughnuts. Yum!
INGREDIENTS


2 Cups All Purpose flour
3 Tablespoons Sugar
1/4 Teaspoon Salt
1 Teaspoon  Instant Active Yeast
1/2 Cup warm Milk
1 Teaspoon Cinnamon
1 Cup cooked crushed Peanuts
4 Tablespoons Butter

For Glaze
1/2 Cup Icing Sugar
2 or more tablespoons Milk

INSTRUCTIONS

Mix flour, salt, yeast and sugar in a medium bowl. Whisk to combine well


In different bowl add butter to warm milk and whisk until butter melts


Pour the milk mixture into the dry ingredients.


Mix with a wooden or metal spoon until a soft dough starts to form


Turn dough onto floured surface and knead until soft but pliable. When you poke dough with thumb it should easily bounce back so you know it is ready


Oil a large bowl and place dough into it. Make sure to coat the dough with oil too so that it is easy to work with


Cover with damp kitchen towel and place in a warm place for 1-2 hours or until doubled in size


After resting turn dough onto floured surface, knead a little then divide into four large balls


Roll out dough into your desired thickness.


Cut out round shapes with cookie cutter or round rimmed glass.


Then use a smaller round shape and cut out the doughnut holes


Repeat the process until all the dough has been cut into round doughnut shapes


Cover the doughnuts with kitchen towel and let rest for 30 minutes

Once rested heat a large heavy deep bottomed pan and fill half way with oil

Drop a few pieces of the doughnuts into the hot oil and cook until golden brown on both sides

To make the glaze pour the icing sugar onto a flat bowl and add milk a tablespoon at a time until you get a thick mixture

Dip one doughnut at a time into the sugar glaze and set aside


Sprinkle the glazed doughnuts with generous amounts of crushed peanuts


Serve immediately with your favorite drink or as a snack

  3. After resting turn dough onto floured surface, punch it down and divide into four pieces. Take one of the dough and roll it out to your desired thickness. Use cookie cutter or glass to cut round shapes. Use a smaller cookie cutter or bottle cap to create the doughnut holes
  4. Repeat until all the dough is formed into doughnut shapes. Cover with tea towel to rest 30 minutes
  5. Heat oil in heavy bottomed pan, add the doughnuts a few at a time and cook both sides until golden brown. Set them onto a kitchen towel to drain off excess oil
  6. For the glaze mix the icing sugar with a tablespoon of milk at a time until you get a thick consistency. Dip the doughnut into the glaze mixture then generously sprinkle with crushed roasted peanuts
