AVOCADO WATERMELON SALAD WITH LEMON PEPPER DRESSING


Crunchy, fresh, sweet, savory, tasty, healthy.  If there is anything I love its having fresh salad. Nothing beats vibrant colours staring at you just waiting for you to munch down. I gave you a dessert in the last recipe so I thought I would go all healthy on you, but still keeping it 100% delicious for #AvocadoAugust! Salads come in different forms and you can choose to have yours with as little or as much ingredients as your heart desires. To get the best out of salads, you can use flavoured vinegar. Put herb sprigs like tarragon, basil, Rosemary and thyme into white wine vinegar and leave for 1 month before use. Nuts add texture interest as well as flavour to salads. They also provide protein. You can try hazlenuts, pecan, peanuts, almonds and even pistaschio in salads to give it crunch. Avocado gives this salad that rich creaminess and smooth texture while the lemon pepper dressing brings it to full circle. Simple ingredients yet big flavours is what you get from this delicious salad. What are some of your favourite salad toppings?

INGREDIENTS


1 Cucumber
1 Cup Tomatoes
2 Avocados
1 Cup Watermelon
Pinch Salt
Bunch Lettuce

Lemon Pepper Dressing
1 Lemon
1 Cup Olive Oil
1/4 Cup White Vinegar
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper

METHOD


Lay lettuce at the bottom of a bowl


Add watermelon


Add chopped cucumber


Add tomatoes


Add chopped avocado


Pour the lemon pepper dressing over the salad


Make sure every inch of the sold gets the delicious lemon pepper dressing


Toss gently to combine making sure you do not smash the avocado


This is the freshest most delicious salad you will ever eat. Trust me, I devoured a whole bowl just by myself

Ingredients
  • 1 Cucumber
  • 1 Cup Tomatoes
  • 2 Avocadoes
  • 1 Cup Watermelon
  • Pinch Salt
  • 1 Bunch Lettuce
  • Lemon Pepper Dressing
  • 1 Lemon
  • 1 Cup Olive Oil
  • 1/4 Cup White Vinegar
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
Cooking Directions
  1. Lay lettuce at the bottom of a medium bowl, Add Cucumber, Tomatoes, Avocados, Watermelon, and Salt, mix well
  2. Make salad dressing, Add Lemon Juice, Olive Oil, White Vinegar, Salt and Black Pepper in mason jar, shake thoroughly until well combined
  3. Pour the salad dressing over the salad before serving
