METHOD
Make the dressing. Add the honey, lemon juice, black pepper and vegetable oil in small jar. Shake to mix all ingredients until oil emulsifies. Set aside
Add onions to small bowl, pour white wine vinegar and mix. Allow to sit 10 minutes. This helps to remove the acidity and add extra flavour
Add chopped watermelon to bowl
Add soaked onions
Mix well
Add chopped mint
Mix well
Add crumbled feta cheese
Mix well
Pour the dressing over the salad

Allow to sit few minutes before serving
