HOMEMADE FRESH CARROT PASTA DOUGH


I love homemade food, so fresh, so fun to make and let's not forget healthy too. Pasta has always been my favourite dishes to whip up anytime I am craving comfort food. I made the first pasta dough that turned out great and I knew I would be making other flavours. Only four ingredients and you have this delicious pasta dough. It really does not take up much of your time and in the end you have this amazing batch of pasta dough that you can use for several meals. To make it even more healthy you can your wholewheat flour which h will give the pasta a lovely texture and flavour. Making carrot pasta dough is a cheats way of adding veggies into your diet. This is also a fun way to include the kids in making thus carrot pasta dough. You can choose to make fetuccini pasta, ravioli, or linguini pasta the ideas are endless! Have it fresh or dry it out first then make delicious meals out of the pasta. A great soul food right there.
INGREDIENTS


4-5 Carrots
2 Large eggs
21/2 Cups Flour
1 Teaspoon Salt

METHOD

Boil carrots until tender for 5-7 minutes. Drain and puree in a blender. Measure out 1/2 Cup and discard the rest. Add the two eggs to the blender and blend with the carrots until smooth and incorporated


Add flour and salt into the carrot puree


Start mixing the dough with your hands until it cones together


Once the dough is formed set it on a floured surface, keep kneading


Once the dough becomes smooth yet pliable, place back in the bowl, cover and let it rest for 30 minutes


Divide dough into four equal pieces


Cover the rest if the dough pieces, take one and start to roll into a triangular shape


Roll out the dough thinly as far as your work surface allows. Try to maintain the triangular shape as much as you can


Once the dough is rolled out thin, you should be able to see your fingers/ hand through the dough, cut in half since it will be very long 


Fold the dough in half




Fold the dough in half again


Fold the dough the last time over itself


Cut the pasta dough into 1/4 inch strips


Slip a knife between the folds to release the pasta pieces. Wriggle your fingers to unravel the pasta. Sprinkle flour so that the pasta does not stick to each other

You can cook the pasta immediately for 4-5 minutes with your favourite sauce or stir fry



Or you can let the pasta dry out and use later
