2 Large or 5 Medium Zucchini
1/4 Teaspoon Baking Powder
Olive Oil for cooking
1/2 Teaspoon Black Pepper
1 Cup Green/Spring Onions chopped
2 Large Eggs
1 Teaspoon salt
INSTRUCTIONS
Wash Zucchini under running water to get rid of dirt or particles
Trim off the ends of each Zucchini
Grate each Zucchini on the larger grating holes of your grater
Pour the Zucchini in a medium bowl and add the teaspoon of salt
Stir the salt into the Zucchini until completely mixed. Set aside for 10 minutes
Meanwhile, chop your green/spring onions into small pieces
After 10 minutes squeeze the Zucchini tightly through a sieve or clean kitchen cloth to remove all the extra water. Add the chopped green/spring onions
Add in the lightly beaten egg
Mix until well combined
In a separate bowl pour in the all purpose flour
Add Salt
Add baking powder
Add black pepper. Mix until well combined
Add the flour mixture into the Zucchini mixture
Stir completely until all the ingredients are well combined and evenly distributed
Heat a non stick pan/ skillet on medium high heat. Add Olive oil
Add a Tablespoon heap of the Zucchini mixture
Flatten the Zucchini mixture with the back of the spoon until they are pancake shaped
Cook for 3-5 minutes on the first side or until golden brown. You can add more oil if needed
Gently lift the Zucchini fritter off the pan as you flip it so that the second side gets the chance to be cooked
Let the second side cook until golden brown.
Remove the Zucchini Fritter from the heat and place on a kitchen absorbent paper towel and cover to keep warm as you finish with the rest of the Zucchini mixture
Serve immediately with sour cream, this delicious dip or you can eat them just like that!
