HOLIDAY CARROT FRIED RICE


I made this Carrot fried rice over the Christmas holiday last year. I posted the video on my YouTube Channel. It was part on my 2019 VLOGMAS series which I enjoyed completely. This recipe is simple since you can use any left over veggies in your fridge and rice that you had before. This is great especially when you are home and are too tired to cook a meal from scratch.
INGREDIENTS


2 Cups Leftover Rice
1 Green Bell Pepper
2 Tablespoons Ginger Garlic Paste
2 Carrots
1 Tablespoon Black Pepper
1 Onion

METHOD

Add chopped onions into pan with oil


Fry Onions until softened and lightly browned


Add cubed carrots, fry 2 minutes


The carrots should be soft but still crunchy


Add minced ginger garlic paste


Add chopped green bell peppers




Fry the bell peppers 3 minutes


Add black pepper


Add the left over cooked rice


Mix the rice with the vegetables frying for 5 minutes


Generously sprinkle dark soy sauce



Mix well and toss 3 minutes


Serve the rice immediately


This vibrant fried rice can be served with curry, soup or even stir fry vegetables
