-2 Eggs
-4 White Bread Pieces
-1 Cup Lemon Zest
-Pinch Salt
-Oil for frying
Method
-Beat Eggs in a bowl and add Salt
-Pour Eggs in a large bowl that can hold the Bread well so they can soak up the Egg mixture evenly. Add in the grated Lemon Zest
-Beat the mixture well so that the Lemon Zest is evenly distributed in the Eggs
-Place a piece of the White Bread inside the Lemon Zest and Egg mixture. Gently press so that the Bread soaks up the Egg mixture
-Gently lift the soaked bread and allow some of the excess Egg and Lemon Zest mixture to fall back on the bowl/plate
-Place the piece of White Bread back into the bowl so that the second side can soak up too. If you do not want the Bread to soak up too much Egg mixture, just place the Bread in the Egg mixture and turn the other side immediately
-Repeat until all the Egg and Lemon Zest mixture has been used up or you run out of bread slices
-Heat your Non-Stick Pan (best for making French Toast, but pretty much every food)
-Gently place one of the White Bread slices on the Non-Stick Pan and let the Bread cook for a few seconds. You will see the edges start to brown
-Flip it slowly and let the other side cook for a few seconds
-Cook all the other White Bread Lemon Zest French Toasts and lay them on a Kitchen Paper to keep warm
-Serve immediately with a drink of your choice. Or you can have them on their own, like I did

Fluffy Lemon French Toast – FAQs & Nutrition Card
FAQs
What makes this French toast fluffy?
Whisking the eggs well and adding a splash of milk or cream creates a light custard. Soaking the bread fully allows it to absorb the mixture, resulting in a tender, fluffy texture when cooked.
How do I add lemon flavor?
Fresh lemon zest and a little lemon juice added to the custard batter infuse the toast with bright citrus notes without overpowering the sweetness.
What bread works best?
Thick slices of brioche, challah, or any soft white bread hold the custard well and give a nice, fluffy result.
Can I prepare the batter ahead of time?
Yes, you can prepare the custard batter and keep it refrigerated for up to 8 hours. Dip the bread just before cooking.
How do I keep French toast from becoming soggy?
Cook on a medium heat skillet until golden and slightly crisp on both sides. Using slightly stale bread helps absorb custard better without getting mushy.
What toppings complement lemon French toast?
Powdered sugar, fresh berries, maple syrup, whipped cream, or a drizzle of honey all work wonderfully.
