NO BAKE Strawberry Cheesecake


No bake recipes are the best! Especially when you don't feel like opening the oven during the hot summer days. Or when you do not have electricity, that so happens in our Town sometimes. This no bake strawberry is my second no bake cheesecake. You can check out my Avocado Cheesecake that was so delicious it did not even last 2 days! 

INGREDIENTS


COOKIE CRUST
2 Cups Graham Crackers/Digestive Biscuits
2 Tablespoons Granulated Sugar
1/2 Cup Melted Butter

CHEESE CAKE FILLING
2 Pack Cream Cheese
31/4 Cups Sugar
1 1/4 Cup Strawberries
1 Cup Whipping/Heavy Cream

METHOD

Blend your biscuits or pound with hand until it resembles breadcrumbs


Add icing sugar


Add the melted butter


Mix until all ingredients are well combined. Pour crust mixture into baking pan, press to flatten surface, then refrigerate 30-45 minutes


As crust is setting, add cream cheese to medium bowl


Add icing sugar


Use electric beater to cream the sugar and cream cheese


Beat until mixture is creamy set aside


Add into blender chopped strawberries and 1 teaspoon icing sugar


Blend until mixture is syrupy


Add strawberry syrup into cream cheese mixture


Whisk to combine set aside


In different bowl add whipping cream


Whip until you get soft peaks


Add whipped cream into strawberry mixture


Gently fold until mixture is well combined


Rich and creamy


Pour cheese cake filling into the crust


Use spatula to smoothen the surface


Refrigerate the strawberry cream cheese overnight to completely set
