Chicken Mixed Veggie Stuffed Omelette

Now this has become my favorite omelette thus far! Why? It has CHICKEN! hahaha! I guess I just love chicken. You do not need to rack your brain about what to do with left over chicken. It may be to small for a full meal but when you shred you can use as stuffing.

Common choices are bell peppers, onions, tomatoes, spinach, mushrooms, and carrots. You can customize based on your preferences or what’s in season.
