CHICKEN MIXED VEGGIE STUFFED OMELETTE


Now this has become my favorite omelette thus far! Why? It has CHICKEN! hahaha! I guess I just love chicken. You do not need to rack your brain about what to do with left over chicken. It may be to small for a full meal but when you shred you can use as stuffing.

INGREDIENTS

3 Eggs
2 Leftover Chicken Breast
1 Onion
Mixed Veggies (brocolli florets, carrots, french beans)
1 Teaspoon Coriander
1 Teaspoon Black Pepper
1 Teaspoon Cumin
2 Tablespoons Vegetable Oil

METHOD


Add chopped onions to pan with oil, fry until softened


Add mixed veggies (carrots, french beans, broccoli florets)


You can add peas if you like


Fry the veggie mix until softened but still crunchy


Add teaspoon coriander


Add teaspoon cumin


Add teaspoon black pepper


Toss to mix the spices and veggies


Add pinch of salt


Stir fry some more


Add shredded left over chicken breast


You can use any piece of chicken meat to shred as stuffing


Stir fry the mixture until well combined


The stuffing smells amazing!


How vibrant and colorful does that mix look though?


Pour the chicken and veggie mix on a plate and set aside


In same pan add vegetable oil, pour in beaten eggs


Let the eggs cook until starting to set


Take the chicken veggie stir fry mixture


Place the mixture on the edges of the cooked eggs


You can add all the filling inside half the set eggs


Cook the eggs for a few minutes with the filling


Use flat spatula to carefully lift the other half of the stuffed omelette


Flip the omelette over the stuffing


Press gently to make stuffing hold better


Carefully lift the stuffed omelette from the pan


 Place omelette on a warm plate


Perfect stuffed omelette


I love the crunch of the mixed veggies and the crispiness of the shredded chicken


Slice omelette to reveal the delicious chicken veggie stuffing


One delicious omelette bite!
