Quick & Savory Breakfast Idea, Bacon Cilantro Scrambled Eggs


Bacon Cilantro Scrambled Eggs are the ultimate breakfast comfort food with a flavorful twist. Crispy bits of smoky bacon combine with the fresh zing of chopped cilantro to elevate creamy scrambled eggs into a satisfying, protein-packed meal. Perfect for busy mornings or a lazy weekend brunch, this quick recipe delivers bold taste with minimal effort. Serve with toast, avocado, or fresh fruit for a complete, energizing start to your day. Scrambled eggs are usually easy to whip up in a few minutes and the best part is that you can add whatever ingredients your heart fancies! A few classic styles for cooking scrambled eggs include, American style where the eggs are scooped in towards the middle of the pan as they set, giving larger curds.

In India the Egg bhurji is the variant of scrambled eggs. Additions include onions, green chili, chopped ginger, turmeric powder and chopped tomatoes. Sprinkled with chopped green coriander and eaten with roti. The English style of scrambling eggs is where the scrambled eggs are stirred very thoroughly during cooking to give a soft, fine texture. Lately I have been obsessed with bacon I have put it in my very delicious Guacamole and also made its way to my delectable Potato Salad and I see the trend continuing for a very, very long time!

 INGREDIENTS



3 Eggs
3 Slices bacon
1/2 Bunch Cilantro
1/4 Cup Onions
1/4 Cup Tomatoes
1 Teaspoon Black Pepper
1/2 Teaspoon Paprika
Pinch Salt

METHOD
Add sliced bacon pieces in non stick pan


You can add a little oil which will be used to cook the rest of the ingredients just to maintain the bacon flavour


Cook bacon until crispy brown


In same pan you cooked the bacon add the onions and cook until browned


Add tomatoes


Add cilantro


Add the spices, paprika, black pepper and salt


Cook the tomato mixture until tomatoes almost turn to paste like, pour in the beaten eggs


Start scrambling the eggs into the mixture


Continue scrambling until you get your desired doneness. I like mine well done so I scramble longer


Add the cooked crispy bacon, toss few minutes and remove from heat


Serve garnished with more cilantro and slices of lemon
