Ingredients

1 Cup All Purpose Flour
Butter for cooking
2 Tablespoons Butter
1 Teaspoon Baking Powder
1 Bowl/Cup Blue Berries
1 Cup Milk or more if needed
1 Egg
Salt

Method


-Mix together the All Purpose Flour, Baking Powder and a Pinch of Salt in a large bowl
-I used a measuring Jug so that it can be easier to pour on the Pan

-Beat the Egg with the Milk

Make a well in the center of the dry ingredients (All Purpose Flour, Pinch Salt, Baking Powder) and whisk in the wet ingredients (Milk and Egg) to make a thick smooth butter

-Beat in the melted butter

-Batter is smooth and looks yummy already

-Gently stir in half the Blue Berries. When folding in the Blue Berries, be careful not to press the Berries so that they break apart, they should be whole even when cooking them

- Heat a teaspoon of butter in a large/ small Non-Stick frying pan. Spread it around so that it covers the Skillet/Non-Stick Pan

-Drop a large tablespoon of the Blue Berry Pancake batter into the pan and carefully spread it on the pan to your desired size
- Make three or four pancakes at a time depending on the size of your non-stick pan. Mine was small so I was cooking one Blue Berry Pancake at a time
-Cook for about 3 minutes over medium heat until small bubbles appear on the surface of the Blue Berry Pancake

-Turn the Blue Berry Pancake gently and and cook the second side until it turns golden brown. Use medium heat to cook since the Pancakes will be heavy. You need to make sure it is cooked through

-Check the underside of the Blue Berry Pancake if it is done. It should be golden brown. Remove from the Non Stick Pan and cover with a Kitchen Towel to keep warm until you are done with all the batter. Serve with more Blue Berries and Bananas for Garnish

-The inside of the Blue Berry Pancake is perfectly done. These are the fluffiest Pancakes you will ever eat, they are just too good. A burst Blue Berry gives the Pancake a lovely Purple color on the inside. Serve these amazing Sugar Free Blue Berry Pancakes with Tea, Milk or even a Fresh Glass of your favorite Juice.
