They say that breakfast is the most important meal of the day. You should eat breakfast like a King. Well, they, whoever they may be, were absolutely right, especially that glorious part that advises, “Eat breakfast like a King.” Begin your day with a meal that energizes. It should nourish and delight. You might as well do it with grandeur and style. In fact, why stop at being a regular King when you can dine like the King of a foreign land? A land rich in flavors, culture, and color. Let us say... the Spanish King.

Enough of my ramblings for now. Let us talk about today’s recipe. I fondly refer to it as the Spanish Potato Frittata. It is a hearty and colorful dish. This breakfast combines eggs, potatoes, and vibrant vegetables. Together, they create a golden, flavor-packed masterpiece. If you appreciate bold flavors, this is the breakfast you have been waiting for. It offers hearty meals in the morning.

I have another egg recipe that you might want to try sometime. However, today, my excitement is solely reserved for this one. It is rich in texture, full of nutrients, and, most importantly, bursting with taste. It feels festive, yet it is simple to prepare. The perfect way to begin your day when you want to nourish your body and awaken your senses.

Ingredients

2 Cups Potatoes cubed
3 Eggs
1 Red Onions
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Bunch Corriander
2 Tablespoon Cooking Oil
1/8 Teaspoon Salt
1/2 Teaspoon Black Pepper

Method
-In a Non Stick Skillet, put your Red Onions and add a Table spoon of oil and begin to saute the Onions. Cook until the onions become translucent and begin to turn brown in color

Add the Chopped Potatoes in the Non Stick Skillet

-Mix well with the sauteed Red Onions and add Salt and Pepper to taste

-Cook the Potatoes until they begin to brown. Since we will not be cooking the Potatoes again, taste to see whether they are well done

-Add the Red Bell Pepper and Yellow Bell Pepper to the mix after tasting that the Potatoes are cooked but not too soft so that they can hold their shape in the Frittata

-Keep turning the mixture until the Bell Peppers begin to soften,you do not want them to be overcooked so this should only take a few seconds just to coat all the flavors together

-Add chopped Cilantro to your beaten Eggs and mix together before adding to the Vegetable mixture. Toss the mixture gently so that all the ingredients are evenly distributed. Turn down the heat and let the Egg cook through, you can lift the side to check whether the bottom has browned and is cooking well

-Once you have confirmed that the bottom is cooked well, you will see that even the top is becoming firm. Take a flat plate, cover the Skillet with it and turn it upside down so that the Frittata lands on the plate. Gently slide the Frittata back to the Skillet so that the uncooked part is on the bottom of the Skillet and it can also cook through

-A few more minutes and the Frittata should be done. I insist on cooking with a non-stick Pan/Skillet so that it is easier to remove the Frittata from the pan without any hustle. Slide your Frittata from the Skillet/ Pan and it should turn out something like this. Do not worry that the shape is not perfect, as long as the Spanish Frittata is well cooked you've won!

BELL PEPPER SPANISH OMELETTE FOR BREAKFAST
Ingredients
  • 3 Cups Potatoes cubed
  • 2 Eggs
  • 1 Cup Red Onions
  • 1 Cup Red Bell Pepper
  • 1 Cup Yellow Bell Pepper
  • 1 Bunch Coriander
  • 2 Tablespoon Mixed Pepper Spice
  • 2 Tablespoon Vegetable Oil
Instructions
-In a Non Stick Skillet, put your Red Onions and add a Table spoon of oil and begin to saute the Onions. Cook until they become translucent and brown-Add the Potatoes, Salt and Mixed Pepper spice. Cook until the Potatoes begin to brown-Add the Yellow and Red Bell Peppers and continue to cook until they begin to soften-Mix the Coriander and the egg and pour into the potatoes mixture. Toss the mixture gently so that all the ingredients are evenly distributed-Turn down the heat and let the Egg cook through, you can lift the side to check whether the bottom has browned and is cooking well-Take a flat plate, cover the Skillet with it and turn it upside down so that the Omelette lands on the plate. Gently slide the Omelette back to the Skillet so that the uncooked part is on the bottom of the Skillet and it can also cook through-Remove from heat and serve
