HERB CRUSTED AVOCADO STUFFED CHICKEN BREASTS


Ever looked at food and you wish you could just freeze it up so you can always look at it and admire it? Well,  I did, this amazing chicken, for a few seconds anyway, then I devoured it! Yap, that's how delicious this herb crusted, pan fried chicken breast was. Chicken should never be boring, whether cooking for one or the whole family. I love how amazing chicken always is no matter which style of cooking you decide to use. It being #AvocadoAugust of course Avocado had to feature in. I didn't want just to make a chicken avocado salad, I wanted something amazing! And amazing it was! I used my homemade Italian dressing to get that crunchy crust on the outside while the inside was moist sang juicy. Who knew chicken and avocado could be such an amazing combo!

INGREDIENTS

2 boneless skinless Chicken Breasts
1/8 Teaspoon Salt
1 Cup Homemade Italian Seasoning
1 Avocado 
1 Tomato
2 Tablespoons Vegetable Oil

METHOD


Lay the chicken breasts flat on a chopping board. Flatten a bit with a meat mallet or rolling pin. Sprinkle with a little bit of salt


Generously rub the chicken breasts with the Italian seasoning


Turn the chicken breast and rub the second side too with the Italian seasoning


Leave the herb rubbed chicken beasts on the chopping board for around 15 minutes to take in the herb mixture


Don't you just love it when you get the perfect avocado!!!!


Chop the avocado and tomatoes into bite sized pieces


Slice the chicken breast to create a pocket but do not cut all the way until you split the piece of chicken breast


Stuff the inside of the chicken breast with the avocado and tomatoes


Secure the edges with toothpicks. Actually I realised wooden skewers would be much better so you only have one long skewer holding the chicken breast together


Slice the second chicken breast and stuff with the avocado and tomatoes


Secure that with toothpicks too, so the stuffing does not come out


All set to be fried


Heat a non stick pan and add oil to it, we'll be shallow frying the chicken


If your pan is small like mine was, take one of the herbed chicken breast and lay it on the pan


Let the chicken breast cook on one side for several minutes


Let the second side cook as well until browned


The heat should be medium high so that the chicken breast is cooked through on all sides. I like mine a little charred so the seasoning gave the chicken a crunchy aromatic delicious texture and taste


Cook the herbed chicken breasts turning occasionally to give all the sides a chance to cook through.


Serve the chicken breasts over a bed of blanched salted mixed veggies


That is trully one delicious avecado stuffed chicken breast


Crispy delicious on the outside, moist and tender on the inside, just how I like my chicken
