MARSALA EGG CURRY

 

I had egg curry at my friend's house once and I loved it so I decided to make my own and it turned out great. Egg curries are pretty easy to cook, and the best part is that you can add whatever spices and herbs that you want. Perfect for lunch or even dinner as a side dish with rice.
INGREDIENTS


2 boiled eggs
1 tablespoon turmeric
1 tablespoon garam marsala
1 tablespoon paprika
1 teaspoon chili flakes
1 bunch cilantro
1 tablespoon garlic
2 tablespoon tomato paste
1 onion
2 tomatoes
2 tablespoons curry powder
1 teaspoon ground ginger

METHOD


Boil eggs for 13 minutes


Immediately put in ice cold water so that the eggs do not form a ring around them


Add chopped onions to pan


Fry until lightly browned


Add minced garlic


Fry until garlic is fragranced


Add chopped tomatoes


Start frying the tomatoes


Fry until the tomatoes turn into paste


Add the tomato paste


This is how the mixture consistency should be


Add 2 cups water


Allow mixture to simmer 3 minutes


Add pinch of salt


Add the teaspoon chili flakes


Simmer until the gravy thickens


Add the boiled eggs


Cover the boiled eggs with the gravy


Add chopped cilantro


Serve immediately
