I'm always looking for ways to get my sweet tooth satisfied and when I saw these delicious treats I knew I just had to have them. Of course I couldn't go to Brazil where they come from, so I decided to bring Brazil home. These delicious treats are called Brigadeiros (Brazilian Truffles) Brigadeiro is a traditional Brazillian truffles dessert that makes up a big part of their culture created in the 1940s. The colorful and delicious truffle is considered a national icon and is made of sweetened condensed milk, butter, cocoa powder, and chocolate sprinkles covering the outside layer. This is the classic brigadeiro recipe. Brigadeiros are usually served at birthday parties eaten after the birthday cake. I don't think I'd wait for after the cake, they'd be the first thing I devour! These truffles can be made with dry fruits like pistachios, macademia nuts, almonds or the famous Brazilian nuts. Fruits such as coconut, strawberries, lime, passion fruit and oranges can be added as well. You can make it a boozy affair by adding wine, whisky or Baileys Irish Cream liquer. Today I opted to use strawberries for my first brigadeiro truffles since I love strawberries and they give these desserts that lovely pink color that's exciting!
INGREDIENTS
1 Cup Strawberries
1 Cup Sweetened Condensed Milk
1/2 Cup Water
1 Cup Rainbow Sprinkles
1 Tablespoon Butter
1/4 Cup White Chocolate
METHOD
Reduce strawberry and water to jam like, add butter
Add in grated white chocolate
Pour in the sweetened condensed milk
Start stirring with a spoon to mix all the ingredients
On medium high heat stir continuously as the mixture starts to thicken
Stir until the bottom of the pan can be seen when a spoon is passed through
Pour into a greased plate and chill for 1 hour. Take it out and use a spoon, ice cream scoop or your fingers to scoop out chunks to form round balls
Roll the truffles in the palm of your hand to form round balls, they can be any size you like
Pour rainbow sprinkles onto a bowl and add the truffle balls rolling them around to be coated
Make sure the truffles are coated well
If the sprinkles are not evenly coated you can place the truffle balls in your hand filled with rainbow sprinkles and gently roll them in your palms gently together with the sprinkles

Coat all the balls in the rainbow sprinkles. Return to fridge for 15 minutes to firm up a bit
Serve these strawberry brigadeiros at a party, at home as a snack or even for kids as light bites
