ALOO BEANS KI SABZI


HAPPY MOTHERS' DAY. As you celebrate mothers around the world, all mother figures, mothers already, mothers to be, grieving mothers, may we find it in our hearts to appriciate and thank them for the huge part they have always played in our lives. Celebrate her. I would have loved to bake a cake today but I was craving something Indian. And so was born today's mothers' day recipe. Aloo beans ki sabzi is a Punjab Styled Indian dish of stir fried french beans and potatoes (aloo). I love Indian food because of th aromatic, sweet and flavourful spices that are used throughout. This dish is no different. You get spicy earthy flavours from the spices and the health benefits of potatoes and french beans. 
INGREDIENTS


3-4 Potatoes
2-3 Tablespoons vegetable oil
250g french beans
1/2 Teaspoon Garam Marasala
1/2 Teaspoon Turmeric powder
1/2 Teaspoon Paprika/ Red chili pepper
1 handful dried mango or (dry mango powder)
Pinch salt

INSTRUCTIONS


Cut the potatoes into wedges or any shape you prefer. Cut the french beans, long or short strips. Heat a heavy bottoned pan/skillet. Add the oil. Once the pan is hot, add the potatoes and sautee for 3-4 minutes.


Once potatoes have began to soften add in the french beans


Sautee the potatoes and french beans on low heat for 8-10 minutes turning regularly so they do not burn


Add into th veggies turmeric powder, paprika and salt


Mix to combine and cook further


After 8-10 minutes, the veggies will have cooked through. Add the turmeric powder


Mix completely then add the chopped dry mangoes into the mixture


Let the stir fry cook for a few seconds so that all the flavours and ingrediets meld into each other


Remove the stir fry from the heat and serve immediately. This Aloo dish can be served as a veggie side dish with some fragrant rice, roti or even sweetened curd (yoghurt)

Ingredients
  • 3-4 Potatoes
