SPICY BROWN SUGAR APPLE CHUTNEY


The burst of flavours that come from this chutney are just out of this world! Chutney is uaually a condiment that originated from India, specifically East India and comes from the word "chatni" which means strongly spiced. Chutneys usually consist of a mix of vinegar, sugar, chopped fruit and spices and are traditionally served with curried foods. There are so many different ways of making chutney. When it comes to spices you can use cardamom, ginger, all spice, cinnamon, nutmeg and even cloves. For the fruits you can use raisins, peaches, mango, apricot, tamarind and even most citrus fruits would work well. Herbs that you can add to chutneys include coriander and even mint. All these wonderful combinations of tart, sweet flavours and a touch of aromatic spice really compliments strongly flavoured dishes especially meat. Serve the chutney as a side to accompany curries, meats one even breakfast options.
 INGREDIENTS


4 Firm Apples
1 Cup Brown Sugar
2 Tablespoons Fresh Ginger
1/2 Teaspoon Cinnamon
1/2 Teaspoon All Spice
1/2 Teaspoon Ginger
1/8 Teaspoon Nutmeg
Pinch Salt
Pinch Cayenne Pepper

METHOD

Chop apples and add to deep heavy bottomed pot


Add chopped ginger


Add brown sugar


Add salt and Cayenne pepper


Add cinnamon


Add all nutmeg


Add ground ginger


Add all spice


Heat the pan on medium high heat


Combine all ingredients so that everything is mixed well, the spices, sugar and apples are well coated


Stir occassionaly as the mixture cooks


The apples will still be chunky as the sugar starts to melt. Keep cooking and stirring


After 40 minutes the apples will have softened and broken down


Let the chutney cook further so a to get a thick consistency. You can even smash the apple pieces to get an even smoother chutney


Let the apple chutney cool down before transferring to an airtight container to store if not using immediately

Yield: 1/2 Jar
Ingredients
  • 4 Apples
  • 1 Cup Brown Sugar

  • 1/2 Teaspoon All Spice
  • 1/2 Teaspoon Ginger Powder
  • 1/8 Teaspoon Nutmeg
  • Pinch Salt
  • Pinch Cayenne Pepper
Cooking Directions
  1. Add chopped Apples, Brown Sugar, Fresh Ginger, Cinnamon, All Spice, Ginger Powder, Nutmeg, Salt, and Cayenne Pepper in deep bottomed heavy pan
  2. Combine all ingredients so that everything is mixed well, the spices, sugar and apples are well coated. Stir occasionally as the mixture cooks
