AVOCADO BEET SALAD


Happy Election day Kenyans! Now lets get back to food business. Today I made a Fruit Salad. Fruits Salads are just colorful little bowls of yummy wonders. We got a bunch of fruits from Ushago (the village/grandmas home) and what better way to enjoy them all at once other than as a fruit salad. You can make ahead and refrigerate for later use but make sure you sprinkle with lemon or lime so that the Avocado or Bananas do not discolor. I'm liking the Beet root currently, it not only adds a bright red color to the Salad, but gives the Salad a lovely crunch. Most importantly the Beet root is great for your health as it increases your blood.A few pointers that I have now learnt. Mix the Beet root right at the end just before serving as it tends to discolor the rest if the ingredients. Two also add the avocado in the end and gently toss if your Avocado is very ripe. Apart from that, have fun making your Fruit Salad, add or remove any ingredient that you do not like!
Ingredients

-Pinch of Salt
-1 Orange

Method


Slice Bananas

-Peel, seed and segment Orange

-Cut Avocado into cubes

-Cut Beet root into cubes, you can slice into strips if you like

-Arrange your fruits in small bowls for easier compiling

-Add Bananas and Oranges in a medium bowl

-Pour in the Beet root

-Gently toss the Bananas, Oranges and Beets to combine

-Add in the Avocado

-Toss the Salad gently or slowly mix with a fork

-Squeeze fresh Lime juice into the Salad. Not only does the Lime give the Salad a lovely tangy flavor, it prevents the Avocado and Banana from discoloring. Mix the Salad ingredients by tossing or gently mixing with a fork. Serve your Lime Beet Avocado Salad as a side dish or a snack

AVOCADO BEET SALAD
Ingredients
  • 1 Banana
  • 2 Lime
  • 1 Avocado
  • 1 Orange
  • Pinch Salt
  • 1/2 Beetroot
Instructions
Slice the bananaPeel, seed, segment the orangeSlice avocado into cubesCut the beetroot into cubes or strips if you likeAdd oranges into a bowl, add bananas, add beet root, top with the chopped avocadoSprinkle juice of two limes into the bowlGently toss the ingredients to mix. Point to note if bananas and avocados are too ripe do not over mix, they will become mushyServe immediately
